Easy No-time Chicken Stock
Chicken stock is the basis to make your everyday cooking much more delicious. It’s fun to take your time and fuss over a stock, but you don’t always have that time. For those moments, here is a stock that you can have in under an hour that is flavorful, easy and delicious. If you are making chicken stock, it only makes sense to make extra, freeze it and use it in the future.

Easy No-time Chicken Stock
Description
This quick and easy chicken stock is perfect when you don’t have enough time to let it simmer all day! Quick and delicious!
Ingredients
- 6 quarts water
- 2 Tbsp salt
- 20-25 peppercorns
- 5 chicken backs
- 2 chicken thighs
- 2 chicken drumsticks
- 2 chicken wings
- 5 celery stalks
- 5 carrots
- 1/2 celery root
- 2 parsnips
- 1 onion
- 5 sprigs of parsley
Instructions
- Put water in a large pot and bring to a boil. Place all ingredients in the boiling water. When it comes back up to a boil, turn the heat down to a simmer, so that it is constantly moving but not at a boil. Simmer for 30 min. Strain and it’s ready.
Notes
This produces some lovely leftover vegetables. They’re delicious blended with some chicken stock, tomatoes or tomato paste, and seasonings for a great soup.

Chicken stock is one of the only things I freeze. Love to have it in the freezer for a sick kid or the base to any soup I make. This chicken stock looks so yummy!

Made this soup on Monday night and it was delish! I usually make the longer chicken broth but it was a weeknight and I was just craving soup. Highly recommend. I wish I had a bigger pot so I had some to freeze. Chopped up the Chicken and veggies and added them back into the soup. Yum.
Made it again! Still the easiest and best even after a long day of working. Going to cut up the chicken and add it to the soup!
