Ingredients
- 8 chicken thighs — bone-in, skin on
- 1 cup chopped celery
- 1 cup chopped onion
- 1 cup sliced carrots
- 4 Tablespoons olive oil, divided
- 1–2 cups warmed chicken stock (use compliant if Whole30)
- ¾ cup green olives
- ½ cup chopped basil
- ½ cup parsley, chopped
- 1½ Tablespoons garlic cloves, peeled and sliced
- 1 lemon, sliced
- 2 teaspoons macerated preserved Meyer lemon MAGIC ELIXIRS
- 1 teaspoon salt
- Freshly ground black pepper
Instructions
- Preheat oven to 350° F.
- In a large frying pan over medium-high heat, add 2 tablespoons of olive oil and brown the chicken thighs on skin-side down first until golden brown and crispy, about 4 minutes. Then flip and cook for about 3 minutes until browned, but not cooked through. Work in batches and set browned thighs aside on a plate.
- Lower the heat to medium, throw in sliced garlic and brown for about 30 seconds. Remove the garlic and set aside with the chicken.
- If the oil is burned, wipe out the chicken oil and add 2 tablespoons fresh olive oil. Over medium heat, add the chopped celery, onions and carrots to make the mirepoix. Cook for about 7-10 minutes or until caramelized.
- Return chicken to pan. Stir in 2 teaspoons of macerated preserved lemon with 1 cup of warmed chicken stock. Pour the mixture over the chicken.
- Cover and put in the oven for 40 minutes at 350°F.
- Remove from the oven and pour in enough chicken stock to cover the bottom of the pan, but do not fill above the skin on the chicken thighs. Then toss in olives and sprinkle with the parsley, basil, lemons and place back in oven, uncovered, for 20 min.
- Remove and serve.

Loved your WHOLE30 takeover on IG!! Addicted to your IG Stories & recipes!! I’m itching to go to London now & try all the food adventures you’ve been posting about! We have a new Airlines at Stewart Int Airport right by me that flies to the U.K.!!! Norwegian Airlines here from upstate NY. I live in the beautiful Hudson Valley! I taught my oldest daughter of 6 kids to cook many years ago, but she quickly surpassed me in her skills & is like a gourmet chef now! I would love â¤ï¸ to give her this gift. For many many years I was extremely ill & bedridden & she so lovingly helped me raise her younger siblings & prepared many a meal for our large family. I was a single mom & she was my “right hand man” so to speak! I cherish her & all she did for all of us all those yrs.â˜ºï¸ She has many stomach issues & has become vegan but can’t even eat certain vegetables & legumes. So she had to recently start adding salmon & other fish to her diet after many years as a vegan. Her husband started a WHOLE30 several months ago & lost 20 pounds & start sleeping better & his health greatly improved & he continues to eat while 30 & so does my daughter on her limited diet. She’s been gluten free for many years also. She’s so creative & just brilliant in the kitchen with her cooking repetoire! She’s overall an outstanding woman that does full time volunteer work in our community. I am going to share your recipes with her. She still lovingly prepares WHOLE30 meats & other foods she can not have for her husband. Thanks for all you do in sharing your knowledge & creativity in the kitchen with all of us! It was delicious but there’s a bitter after taste! I’m not sure what I did wrong but I didn’t burn it that’s for sure? Could it be the olives or the lemons?
I don’t know… Certainly that could be the olives and depending on which kind you use. Are you using preserved lemons? Also if you want to problem solve about it the best thing to do is direct message me on Instagram
