Coq au Blanc

  • 1 cup celery, chopped
  • 1 cup onion, chopped
  • 1 cup carrots, sliced
  • 2 Tbsp olive oil
  • 3 cups chicken stock
  • ¾ cup green olives
  • ½ basil chopped
  • ½ bunch parsley, chopped
  • 1 lemon, sliced
  • 8 chicken thighs – bone-in, skin on
  • 4 garlic cloves, peeled and sliced
  • 2 Tbsp preserved lemon
  • 1 tsp salt
  • Freshly ground black pepper
  1. In a large fryingpan, over med-high heat, add 2 tablespoons of olive oil and brown the chicken thighs on both sides until golden brown, but not cooked through. On your last batch of chicken, throw in sliced garlic and brown for a few seconds. Remove the chicken and garlic and set aside.
  2. In the same pan, wipe out the chicken oil and add 2 tablespoons fresh olive oil. Add the celery, onions and carrots to make the mirepoix. Cook for about 10 minutes or until caramelized.
  3. Return chicken to pan. Stir in 2 teaspoons of macerated preserved lemon with 1 cup of warmed chicken stock. Pour the mixture over the chicken.
  4. Cover and put in the oven for 40 minutes at 350°F.
  5. Remove from the oven and pour in 1/2 cups chicken stock. Then toss in olives and sprinkle with the parsley, basil, olives, lemons and place back in oven, uncovered, for 20 min.
  6. Remove and serve.

  14. Loved your WHOLE30 takeover on IG!! Addicted to your IG Stories & recipes!! I’m itching to go to London now & try all the food adventures you’ve been posting about! We have a new Airlines at Stewart Int Airport right by me that flies to the U.K.!!! Norwegian Airlines here from upstate NY. I live in the beautiful Hudson Valley! I taught my oldest daughter of 6 kids to cook many years ago, but she quickly surpassed me in her skills & is like a gourmet chef now! I would love ❤️ to give her this gift. For many many years I was extremely ill & bedridden & she so lovingly helped me raise her younger siblings & prepared many a meal for our large family. I was a single mom & she was my “right hand man” so to speak! I cherish her & all she did for all of us all those yrs.☺️ She has many stomach issues & has become vegan but can’t even eat certain vegetables & legumes. So she had to recently start adding salmon & other fish to her diet after many years as a vegan. Her husband started a WHOLE30 several months ago & lost 20 pounds & start sleeping better & his health greatly improved & he continues to eat while 30 & so does my daughter on her limited diet. She’s been gluten free for many years also. She’s so creative & just brilliant in the kitchen with her cooking repetoire! She’s overall an outstanding woman that does full time volunteer work in our community. I am going to share your recipes with her. She still lovingly prepares WHOLE30 meats & other foods she can not have for her husband. Thanks for all you do in sharing your knowledge & creativity in the kitchen with all of us!
