Go Green or Go Home: Making the Ultimate Veggie-Filled Sandwich!

You can easily do this with all vegetables, or take the green sauce and make an egg salad rather than the chicken salad. Add any greens you love. Ours has cucumber, avocado, a handful of lovely microgreens, and a handful of arugula. But ours is simply a blueprint! Whether you make this one or another version, the key is that each individual element is fantastic.

Green Goddess Chicken Salad Sandwich

Description

We love the idea of a green goddess in every form, and here’s a way to make an easy, quick chicken salad sandwich.


Ingredients

For the Green Mayo:

  •   1/2 cup mayo
  •   ¼ cup greek yogurt
  •   ¼ chopped parsley
  •   ¼ chopped chives
  •   1/3 chopped basil
  •   2 tablespoons lemon juice
  •   Pinch of salt
  •   Pinch of pepper

 

For the sandwich:

  •   2 1/2 cups pulled Sizzling Everyday Roasted Chicken breast meat or any rotisserie chicken breast
  •   1/3 cup c hopped green onions
  •   8 slices of gluten free or regular bread
  •   4 to 8 tablespoons Pistachio pesto or store-bought pesto, hummus, or babaganoush
  •   1 cup microgreens
  •   1 cup arugula
  •   Kosher salt
  •   1-2 avocados, sliced
  •   1 medium-sized cucumber, sliced
  •   Marinated onions, optional

Instructions

Make the Green Mayo. 

  1. Put all of the sauce ingredients in a food processor and blend. Scoop the green sauce into a bowl and set aside in the fridge.

 

Make the sandwich. 

  1. In a bowl, coat chicken with 1/2 cup of Green Mayo and add the green onion and stir everything together then set aside.
  2. If using gluten-free bread, toast your bread on both sides. If using regular bread, toasting your bread is optional.
  3. Spread 1-2 tablespoons of pistachio pesto on one slice of bread and 1-2 tablespoons of the remaining Green Mayo on another. On the slice with the green pesto, add one fourth of your chicken salad and top with ¼ cup each of microgreens and arugula. Salt the greens. Layer slices of cucumber, avocado and marinated red onions, if using, on top of the greens and close the sandwich with the other slice of bread.
  4. Repeat with remaining ingredients.

Serve and enjoy!
