Thanksgiving is the greatest holiday, because not only do you get time with loved ones over a delicious meal, but you also get amazing leftovers, like this Leftover Turkey Sandwich!

My favorite thing about Thanksgiving is the incredible leftovers you have to make this leftover turkey sandwich. If you want to make sure you have plenty of leftovers, it’s great to roast up a turkey breast. Roy likes to call it a stunt turkey. It’s amazing because not only do you get the leftovers for your sandwich, but you also have the carcass to make an incredible soup.
For my sandwich, I used my favorite gluten free bread, Canyon Bakehouse, but you can of course use gluten-full. What I love about this recipe is that it takes all of that deliciousness from Thanksgiving with the turkey and cranberry, but adds some new flavors with the feta and marinated onions. It still feels like Thanksgiving, but it’s so fresh and perfect for lunch. And if you’re looking for more ways to incorporate feta, we absolutely love these feta mashed potatoes.

Ingredients and Variations
- Bread – you can use your favorite bread or substitute gluten free
- Mayonnaise – I used Duke’s
- Leftover turkey
- Fresh arugula
- Marinated Red Onions plus a drizzle of their oil
- Leftover canned cranberry sauce
- Feta cheese block
I love the feta in this sandwich but of course it’s also lovely with swiss cheese.
Feel free to get creative with your sandwich too! Add potato chips, giardiniera, some crispy leftover mashed potatoes, whatever you would like. It’s such a fun sandwich to make because the options are endless.
How to Make A Leftover Turkey Sandwich
Step One: Make Your Sandwich
Spread mayonnaise on both slices of toast. Layer the turkey on one slice and on the other, place a handful of arugula, a forkful of marinated red onions, plus a little of the onion oil.
Place the cranberry sauce slices on top of the turkey.
Place feta pieces in a dry skillet over medium heat. Cook about 2-3 minutes on each side until golden brown. Place feta on top of the cranberry layer, close the sandwich, press gently, and enjoy!
If you’re making this in the middle of the night and/or don’t want to dirty a pan: Melt the feta (slices or crumbles) on the bread as it toasts in a toaster oven or under the broiler.

Ingredients
