A Note from Teri on Gluten Free Apple Crumble
If you are like me and prefer cooking to baking, I think a crumble is the most perfect dessert. It is the best combination of fresh and sweet, and it’s as simple as combining the ingredients, stirring, and baking! I like to do all the dry ingredients in a jar ahead of time so I can quickly whip up a crumble with seasonal fruit when I’m at the cabin. There is a blueberry crumble in the cookbook, and a strawberry rhubarb crumble recipe here. I felt so inspired by my love of apples that I wanted to share this apple crumble recipe, which I first shared over on Substack.
There are so many other wonderful ways to enjoy apples. My Apples with Kale in the Nocrumbsleft cookbook is the one of the most delicious dishes you will make all fall. I always include a little apple in my daily green juice. They’re a great addition to so many salads. I also love to do my Red Rock salad with apples, and my pork with apples. By the way my Cardamom Apples are fabulous.
I love apples in every form. They are simple, nutritious, high-fiber, and low in calories, but above all they are delicious. I always look forward to my weekly trip to the Green City Market, where Steve from Nichols Farm will cut me up an apple and encourage me to compare the varieties.
Ingredients and Variations
- Unsalted butter
- Pecans
- Medium-size apples – you can peel the skin or leave it on, whatever you prefer
- Granulated sugar
- Cornstarch
- Lemon zest
- Lemon juice
- Apple juice
- Old-fashioned rolled oats
- Brown sugar
- Oat flour
- Kosher salt
If you don’t have oat flour, grind ½ cup of oats in a food processor for 2 minutes, then give it a really good stir. Measure out 3/4 cup for the recipe.
If you use dark brown sugar instead of light brown sugar, your crust will be extra dark and extra delicious.
How to Make Gluten Free Apple Crumble
Step One: Prep the Crumble
Preheat the oven to 350F. Thoroughly grease a 8-or-9 x 11 oval baking dish with a tablespoon or so of butter. Set aside.
In a small, dry frying pan over low heat, cook the pecans until fragrant and lightly toasted, about 8 minutes. Remove them from the pan, roughly chop and set aside. In a small saucepan over low heat, melt the butter. Remove the pan from the heat and set aside.
In a medium bowl, mix together the sliced apples, sugar, cornstarch, lemon zest and juice to combine well. Pour the mixture into the prepared baking dish and set aside. In another medium bowl, combine the rolled oats, brown sugar, oat flour, and salt, stirring to combine. Add the reserved pecans and stir. Pour in the melted butter, stirring to combine. Spoon the mixture evenly over the apples.
Step Two: Bake the Crumble
Transfer to the oven and bake until it starts to bubble around the topping, about 35-40 minutes. Cover the pan and continue baking until the whole crumble is bubbling and the top is browned nicely, an additional 5-10 minutes or so.
Teri tip: This is always a debate in my family. I like a soft chewy crust and this is perfect for me. Other family members like it crunchy and cook it uncovered the whole way through.
Storage and Leftovers
If there are any leftovers, store in an airtight container in the fridge for up to three days. Reheat in the oven until warmed through.
