Description

Make this sandwich for the most delicious way to enjoy your Thanksgiving turkey leftovers.


Ingredients

  •   2 slices bread, toasted
  •   1-2 tablespoons  mayonnaise
  •   3-4 ounces leftover turkey
  •   Handful fresh arugula
  •   Marinated Red Onions plus a drizzle of their oil
  •   Leftover canned cranberry sauce, cut into two 1/4- to 1/2-inch-thick slices
  •   2-4 slices from a block of feta cheese

Instructions

  1. Spread mayonnaise on both slices of toast. Layer the turkey on one slice and on the other, place a handful of arugula, a forkful of marinated red onions, plus a little of the onion oil. 
  2. Place the cranberry sauce slices on top of the turkey. 
  3. Place feta pieces in a dry skillet over medium heat. Cook about 2-3 minutes on each side until golden brown. Place feta on top of the cranberry layer, close the sandwich, press gently, and enjoy!
  4. *Alternative method if you’re making this in the middle of the night and/or don’t want to dirty a pan: Melt the feta (slices or crumbles) on the bread as it toasts in a toaster oven or under the broiler.
