A Quick & Easy Chopped Sandwich with Cottage Cheese
Chopped sandwiches are having a moment. They’re trending on Instagram, and as an influencer it’s always fun to jump in and create my own spin. The chopped sandwich idea is to assemble your ingredients on a cutting board, including the sauce, the condiments, the protein, the cheese…and simply chop it all up. How easy is that? As with any trend, some people love it, and some people are downright offended by it. But you can’t deny that it’s fun to do, and we think it’s pretty darn delicious.

Cottage cheese is having a moment, and we are all in. It may look unappetizing, but it sure is delicious. For this high protein meal, we chopped up eggs, avocado, cottage cheese, Creamy Chive Dressing, and topped it with Marinated Red Onions, Chives, parsley, and Chili crisp oil.
Another viral cottage cheese recipe is this cottage cheese wrap! Blend cottage cheese, egg, salt, pepper, garlic powder, and Italian seasoning together and bake in the oven.

Chopped Egg and Avocado
Our spectacular high-protein version includes jammy eggs, avocado, cottage cheese, herbs, and one of our favorite dressings. We topped it with Chili Crisp oil. I love enjoying this concoction on a piece of toast, but I’ve seen people eat it in a lettuce boat, with crackers, or even alone by the spoonful.




Chopped Sub Sandwich
As a gal who loves an Italian sandwich, I created a chopped Sub Sandwich. We’re pretty clear that eating smoked meat isn’t necessarily good for you, but from time to time, I do love to indulge in an Italian Sub.




Chopped Lox Bagel
I loved making this chopped lox bagel. Click here to see the post and get the mini recipe. I love that you can add your own twist! For example, I added capers and Marinated Red Onions. You could add an egg, a pickle, or some shallot.




Chopped Bagel
This has three glorious scoops of cream cheese, salami, Marinated Red Onion, pickles, giardiniera, salted greens, and tomato. I am a salami for life person, and I always have some on hand. It happens to be ideal for this chopped trend.




Lucy’s Egg Salad
Lucy’s Egg Salad is a follower favorite from the No Crumbs Left cookbook. There’s always a batch in my refrigerator. My version of the traditional egg salad has an extra-chopped consistency that I get by hand grating the eggs on a box grater.




Lily’s Avocado Toast
Lily’s absolute favorite thing to make for breakfast is this avocado toast with a jammy egg. It’s super satisfying and you can cook your egg however you want! Don’t forget to add Marinated Red Onion.




Tuna Salad
Tuna is so satiating, and I feel so good when I eat it. Tuna salad is another refrigerator staple for me. I prefer that the onion, chives, and celery are chopped super small, because to me it really adds an extra element.

Egg and Avocado Chopped Sandwich

Description
Our spectacular high-protein version includes jammy eggs, avocado, cottage cheese, herbs, and one of our favorite dressings.
Ingredients
- 3 eggs
- 4 slices of bread, gluten-free or regular
- 1 avocado
- 1/3 cup cottage cheese
- 2 tablespoons creamy chive dressing or favorite dressing
- 2 tablespoons marinated onions
- 1 tablespoon chives
- 1 tablespoon parsley
- 1 tablespoon chili crisp (use more or less to your liking)
- Salt
Instructions
- In a medium saucepan, bring 6-8 cups of water (there should be enough water to fully cover the eggs by 1-2 inches) to boil over high heat. Once the water is boiling, gently add the eggs to the pan and allow the eggs to boil for 8 minutes. Note: If the water is fervently boiling, you can bring the heat down to medium-high.
- While the eggs are boiling, prepare an ice bath in a medium or large mixing bowl and set aside.
- After 8 minutes, remove the eggs from the saucepan and add them to the ice bath for a few minutes.
- Toast your bread and set aside.
- Peel your soft boiled eggs and place them on a chopping board. Add the avocado, cottage cheese, dressing, marinated onions, chives, parsley, and chili crisp. Season with a sprinkle of salt.
- Using a large knife, begin chopping the ingredients on the board. You’ll chop everything a few times, and in various directions, so that the ingredients begin to combine as you’re chopping.
- Once you’ve reached your desired chopped consistency, scoop a quarter of the chopped mixture onto a slice of bread, top with more chili crisp, if you’d like, and repeat with the remaining three slices of bread.
- Serve and enjoy!
