The Best Egg Salad Sandwich To Celebrate Pride Month
You’re going to love this deliciously unique egg salad sandwich! It embraces all the colors of the rainbow, and it’s filled with what my own youngest, September, loved to eat growing up, including egg salad, salami, blue potato chips, and other deliciousness. The individual elements come together to create this sandwich masterpiece, which we’ve been calling our September Sandwich, as an affectionate nod to my kid.

June is Pride Month, and I am feeling it for my own LGBT+ 26-year-old September, my friends, my neighbors, and all the members of the gay community whom I love and admire. I was delighted to create this Pride Egg Salad Sandwich to celebrate them all. It was fun to choose and combine the colorful elements in a way that would be delicious, beautiful, and festive.




An Egg Salad Sandwich To Celebrate Love
To celebrate my favorite queer people, I wanted to curate a sandwich that not only encompassed the colors of the rainbow, but was a truly delicious meal full of a mother’s love, something September would personally adore–so of course egg salad and salami were an absolute must.

How We Created This Colorful Spread
What a beautiful spectrum of colors we came up with! I love an orange cheese like cheddar, and it’s lovely beside the combination of little cherry tomatoes and thickly cut orange heirloom tomatoes. For green, avocado and microgreens were ideal.



Blue happened to be the most challenging color to match with something delicious, so we went with a blue potato chip for some unexpected crunch and a little bit of fun. Purple cabbage, along with my Marinated Red Onions, rounded out our rainbow.

The Best Egg Salad Sandwich To Celebrate Pride Month

Description
You’re going to love this egg salad sandwich! It embraces all the colors of the rainbow, and it’s filled with egg salad, salami, blue potato chips, and other deliciousness.
Ingredients
Egg salad (enough for one sandwich):
- 2 large eggs
- 2 tablespoons mayo
- 1/8 teaspoon yellow mustard
- 2 tablespoons minced celery
- 2 tablespoons minced onions
- 1 tablespoon minced chives
- Pinch of salt
- Pinch of freshly ground pepper
Other sandwich elements:
- 2 slices sourdough or gluten-free bread
- 2 tablespoons mayonnaise
- 2 ounces beef salami slices
- ¼ cup halved cherry tomatoes, or red tomato of choice
- 2 (¾ inch-thick) slices of orange heirloom tomato
- 2 thick slices cheddar cheese
- ¼ cup blue potato chips
- ¼ cup thinly shredded purple cabbage
- Marinated Red Onions
Instructions
Make the egg salad:
- In a medium saucepan, bring 6-8 cups of water (there should be enough water to fully cover the eggs by 1-2 inches) to boil over high heat. Once the water is boiling, gently add the eggs to the pan and allow the eggs to boil for 9 minutes. Note: If the water is fervently boiling, you can bring the heat down to medium-high.
- While the eggs are boiling, prepare an ice bath in a medium or large mixing bowl and set aside.
- After 9 minutes, remove the eggs from the saucepan and add them to the ice bath for a few minutes then remove from the ice bath and peel them.
- In a bowl, grate the eggs and add the mayonnaise and mustard and give a quick stir. Add the celery, onions, chives, salt, and freshly ground pepper and mix everything together until well combined and set aside.
Assemble the sandwich:
- Toast the bread.
- On one slice of bread, spread one tablespoon of mayonnaise. Add the beef salami slices and top with the cherry tomatoes. Arrange the orange heirloom tomato slices and season them with a small pinch of salt. Add two slices of cheddar cheese and pile the blue potato chips and a mound of the thinly shredded purple cabbage on top. Arrange a forkful of marinated onions over the cabbage. Spread the remaining mayonnaise over the other slice of sourdough and close the sandwich.
- Cut the sandwich in half and enjoy!
