I have mixed it up with some of my favorite ingredients like Aleppo pepper. If you know me, you know my love for spices like sumac and Aleppo pepper. It truly takes these wings to the next level!

The Key to Crispy Baked Chicken Wings

If you’ve made my Everyday Roasted Chicken Breasts or my Heroine Chicken, you know that it is all about the baste! When you bake chicken wings, it is easy to end up with a soggy finished product. To avoid that, we start by cooking the wings covered. This draws out the lovely juices, and after 30 minutes, we baste like crazy.

How to Serve Your Chicken Wings

What is a baked buffalo chicken wing without some lovely ranch to dip it into? I love this homemade WholeSisters Ranch, but this baked chicken wing recipe would also be delicious with my charred scallion dressing.

Ingredients

  • Extra virgin olive oil
  • Freshly squeeze lime juice
  • Smoked paprika
  • Fresh ginger
  • Fresh turmeric
  • Whole wings
  • Kosher salt
  • Cilantro
  • Garlic
  • Aleppo Pepper
  • Ranch or blue cheese dressing

Variations

This recipe as written is gluten free, paleo, and Whole30, so it’s great for just about anyone to enjoy.

You can mix up the spices in this recipe however you would like! I used olive oil, but you could certainly use melted butter instead for a classic buffalo sauce. In place of Aleppo pepper, you could use cayenne pepper, chili powder, or red pepper flakes.. For even more spice, add some extra dashes of hot sauce. Everything can be adjusted to your taste.

This recipe is written for chicken wings, but this sauce would also be delicious on chicken thighs. Just adjust your cooking time as needed to make sure your thighs are cooked fully!

How to Make Baked Chicken Wings

Step 1: Make Sauce and Marinate Wings

Preheat oven to 375F. In a medium bowl, whisk together olive oil and lime juice, then add paprika and stir until dissolved.

Shred and squeeze ginger and turmeric by hand, discard pulp and add juice to marinade.

In a large bowl, add the wings. If they are wet, you can pat them dry with paper towels. Sprinkle the salt all over the wings and using your hand toss to coat them thoroughly on both sides. Place the wings in a container and pour half of the marinade over. Flip and add the rest of the marinade to coat evenly. Sprinkle the cilantro, garlic cloves and Aleppo pepper and toss again. Cover and refrigerate overnight if possible, otherwise, 1 – 2 hours.

Step 2: Bake Chicken Wings

Prepare a parchment-lined rimmed baking sheet and place the wings on to the pan. Pour every drop of marinade over them and cover tightly with aluminum foil.

Bake for 30 minutes. Remove from the oven and remove the foil. Carefully, pour the juices from the chicken wings into a small bowl. Baste the wings with the juices. Turn the heat up to 400F.  and place in the oven uncovered for 15 minutes. Remove from the oven and turn up the heat to 450F. Baste the wings and continue to cook for 15 – 20 more minutes. Total cooking time is about 1 hour, when wings are a deep golden brown, they are ready, but if you like your baked buffalo wings crisp, add a little time.

Remove from the oven and serve with ranch or your favorite dressing and enjoy! Feel free to serve with carrots and celery sticks on the side.

Storage and Reheating

Store leftovers of your crispy oven baked chicken wings in an airtight container for up to four days. Reheat in the oven until warmed through.

These baked chicken wings are perfect for a Super Bowl appetizer! They are a crowd favorite!
