As a vegetable enthusiast and soup lover, I wanted to make a soup that was quick but filled with lovely flavors. In the summer, I love to do a Creamy Asparagus soup or something like my Summer Green Soup, so I wanted to create a winter take on it. This soup is packed with greens, so even though it’s a light soup, it’s absolutely satiating. It is a green bowl of soul!

A soup like this is made great by a homemade stock. I am passionate about stocks, and while you can use store-bought broth, I love making my own. I think it celebrates the true joy of cooking and creating a soup. Ingredients

  • Extra virgin olive oil
  • Diced onions
  • Kosher salt, divided
  • Celery stalks chopped
  • Broccolini
  • Spinach
  • Sliced scallions
  • Chicken stock, warmed
  • Coconut milk, blended
  • Lime juice
  • Green curry paste

Variations

If you want some extra spice, add some sprinkles of red pepper flakes on top. If you really want to take it up a notch, you could add some chili or habanero slices to your pan when you are sauteing. For some added aromatics, add some a couple minced cloves of garlic or garlic powder.

Leeks pair really well with broccolini, so if you enjoy leeks, add a bit when you add the broccolini to the pan. I find this recipe does not need carrots, but if you would like a bit of extra sweetness, add diced carrots with your celery.

I think the flavor of coconut milk with the curry is just divine, but if you do not have coconut milk, you can substitute heavy cream.

The green curry provides so much flavor in this dish. If you would like to increase the smokiness of the soup, you could bake the broccolini instead. Roasting will add a bit of a char that could be fantastic in the soup.

If you want to brighten up your soup, add an extra squeeze of lime or lemon juice. For even more acidity, you could deglaze the pan after sauteing the celery with a splash of white wine.

How to Make This Creamy Broccolini Soup

Saute Your Vegetables

In a large sauté pan, dutch oven, or pot over medium heat, heat the olive oil. When hot, add the onions to the pan with 1 tsp of salt and toss, sautéing for 3 minutes. Add the celery, and sauté for additional 3 minutes.

Add the broccolini, the remaining 1 teaspoon of salt and sauté for 4 minutes.

Constantly stirring from the bottom to the top to cover the broccolini with onions and celery, continue for cooking for 3 minutes. Then add the spinach and scallions, stirring and cooking for 1 minute. Add more salt if needed.

Add Liquids and Blend

Pour in the chicken stock and coconut milk and whisk and simmer for 1 more minute. Add 3 tablespoons curry paste plus 1 tablespoon lime juice. Bring to a boil, then turn off.

Transfer to a Vitamix or use an immersion blender and blend until smooth. Use more chicken stock if needed. Serve. If you would like, add a dollop of cashew cream or sour cream. Shredded white cheddar is also delicious on top.

Storage and Reheating Instructions

Store your broccolini soup in an airtight container in the fridge for up to 5 days. When ready to reheat, place in a pot on the stove and heat over medium low until warmed through.

  •   1 cup coconut milk, blended
  •   1 tablespoon lime juice
  •   3 tablespoons green curry paste

  1. In a large sauté pan over medium high heat, heat the olive oil.
  2. When hot, add the onions to the pan with 1 teaspoon of salt and stir, sautéing for 3 minutes. Add the celery, and sauté for additional 3 minutes.
  3. Add the broccolini, the remaining 1 teaspoon of salt and sauté for 4 minutes.
