The Best Cold Sandwiches For Summer
Making a sandwich is a gift of love, and I’m a girl who truly loves a sandwich! Ever since I was little, making very special cold sandwiches–whether for myself or a loved one–has been one of my superpowers. I quickly learned that delicious food is all about curating the ingredients and spending time with each of them on the way to inventing a little masterpiece.
An easy way to elevate your ingredients is to make a herbed mayo spread. It will significantly dial up the flavor of your sandwiches. And don’t forget about my marinated red onions! They are a sandwich’s best friend.


Today’s roundup is all about some of my favorite summer sandwiches, which are served cold or at room temperature because when it’s hot outside, we want to keep the heat out of the kitchen. Celebrate summer by wrapping them up to make a trip to the beach or a picnic at the park even more delightful.
Tuna Niçoise Sandwich
You’re familiar with my salads as well as my sandwiches, so let’s bring them together! This Nicoise Sandwich is perfect for weekend meals. It’s fantastic with my Creamy Chive Dressing. Though it requires a few steps and some time, the results are definitely worth it.

One of my favorite mayo combinations came to me while creating a Green Goddess chicken salad. I realized that the green mayo would be lovely on just about anything! Blend your mayonnaise with a little Greek yogurt, chopped parsley, chives, basil, lemon juice, salt, and pepper then stir in some green onions. Keep reading to see the recipe below. You’ll definitely want to make this!



Herbed Mayo
- Prep Time: 10 minutes
- Cook Time: 0 minutes
- Total Time: 10 minutes
Description
An easy way to elevate your ingredients is to make a herbed mayo spread. It will significantly dial up the flavor of your sandwiches.
Ingredients
- 1/2 cup mayo
- 1/3 cup chopped chives
- ¼ cup chopped parsley
- ¼ cup chopped basil
- ¼ cup greek yogurt
- 2 tablespoons lemon juice
- Pinch of salt
- Pinch of pepper
- Scant ¼ cup thinly sliced green onions, optional but recommended
Instructions
- Put all of the sauce ingredients in a mini food processor and blend until well combined. If you’re using a traditional blender, double the ingredients so that it blends well as a single batch won’t properly blend.
- If you’d like to go an extra step, I like to add some sliced green onions after blending and stir it all together. Optional but highly recommended!
- Store in a air-tight jar in the fridge for up to a week.
Notes
This herby mayo is really customizable to whatever herbs and spices you have on hand. We’ve also made a vegan version by swapping out the mayonnaise with vegan mayonnaise and swapping the greek yogurt with coconut yogurt – delicious!



I really like the idea of ??treating cooking as a way to express affection. A carefully prepared sandwich is definitely much more special than one just made to get it done. That meticulousness is similar to playing block blast; every step requires thought to create the best possible result.
