I am so excited about Spindrift’s new flavor, Blood Orange Tangerine! It is already in my top three favorite flavors ever. I was so excited about it that I decided to create the perfect club sandwich pairing for it! I’m kind of a sandwich master, and this feels like the perfect bridge between winter and spring eating to have with your new Spindrift!

How to Make Your Club Sandwich

By nature, a club sandwich is all about going big or going home. You need three slices of bread, at least two meats, and some fabulous toppings. For this recipe, we used chicken, bacon, and ham. The chicken is a spin on our Everyday Roasted Chicken Breast. Our toppings were romaine lettuce, tomatoes, and mild cheddar cheese.

And you’re probably saying, what about the mayo? And don’t you worry, because we came up with the perfect Magic Elixir for this sandwich. We took the inspiration from the new Blood Orange Tangerine Spindrift to create a Blood Orange Tangerine Mayo. The best part is, it is beyond simple to make. You combine Blood Orange or Tangerine Jam with your mayo, some chipotle adobo, and boom, you have the perfect mayo for your sandwich!

The mayo gives this amazing sweetness to the sandwich that really takes it over the top. It’s certainly not your ordinary club sandwich! Plus, it pairs perfectly with Spindrift’s Blood Orange Tangerine. Seriously, I cannot get over how good these two are together. This club sandwich takes some time, but it is all worth it. You can certainly buy some sliced chicken and call it a day, but it is truly extraordinary to make your own. Description

This club sandwich is anything but ordinary! It’s the perfect lunch any day of the week. Make your chicken and mayo in advance and have a fabulous sandwich in no time!


Ingredients

For the Spicy Blood Orange Mayonnaise

1 cup mayonnaise

4 tablespoons blood orange or tangerine spread/jam/marmalade

1 tablespoon chipotle adobo

 

For the Sandwich

2 bone-in, skin-on chicken breasts

1 teaspoon extra-virgin olive oil

2 teaspoon kosher salt

¾ teaspoon smoked paprika

½ teaspoon cayenne

1 pound package bacon

6 to 9 slices white bread

Seasonal tomato, cut in slices

Baby romaine lettuce

3 to 4 slices mild cheddar cheese
3 to 4 slices hickory ham


Instructions

Make the Spicy Tangerine/Blood Orange Mayonnaise

Add all the ingredients to a blender and blend to until smooth. Store in an airtight container in the fridge.


Make the Club Sandwich

Preheat oven to 375°F.

 

Rub every crevice of the chicken generously with olive oil, then sprinkle with plenty of kosher salt, black pepper, cayenne, and paprika.  

Bake for about 35 minutes, then brush the top of the chicken with the juices. Return to oven for 5 minutes to brown the top. 

Remove from oven. If it isn’t brown enough at this point, baste again, turn up the oven temp, and bake for another 10 minutes.

Remove from the oven and let it slightly cool. Once it is cool and easy to handle, remove the chicken breast from its bone and cut into thin slices. Set aside.

Place the bacon on a parchment paper-lined baking sheet. Place in the oven and cook until crispy, about 18 minutes. Remove and set aside.

Toast the bread. Spread a generous amount of the tangerine or blood orange mayo on 3 slices of bread. On the first slice of bread, add several pieces of chicken, tomato slices and a slice of cheese. Add the second slice of bread. Add some lettuce, several pieces of bacon and a slice of ham. Top off with the last piece of bread. Enjoy this delicious club sandwich.
