Quick Waldorf Inspired Winter Salad
I have always loved a Waldorf salad, and I wanted to do my own take on it with my pear dressing. I knew there would be an easy way to create a luscious Waldorf Inspired Winter Salad with pears and pomegranates. I’m delighted to say that we cracked the code, and this salad couldn’t be easier to make!

What Goes Into a Waldorf Salad
A Classic Waldorf Salad will use grapes, walnuts, celery and apples tossed with mayo. For our version, we used pears, walnuts, celery, pomegranates, Marinated Onions, goat cheese, and my Whole30 Pear Dressing. If you want to keep this salad Whole30, all you have to do is take out the goat cheese! Everything else is already Whole30 for you, including the creamy pear dressing.

While I am always tempted to make things a little more complicated or gild the lily, I was determined to keep this quick and easy. This winter salad comes together in about 10 minutes, and it’s perfect for an appetizer or light lunch. If you want to make it more of a meal, you could certainly add some more protein.
How to Make Your Dressing
I am so proud of this creamy pear dressing. It’s one of my new favorite Magic Elixirs. All you need is Whole30 Mayo, chopped pears, lemon juice and salt. Combine everything into a jar and blend with an immersion blender. And boom, you have creamy, delicious dressing to use on everything.
This dressing is so sweet and delicious, but it’s also Whole30! Make a whole jar for the week and use it on all your salads! It’s great for this winter salad, but it’s so versatile. Mine never lasts more than a couple of days because I love that much.

Description
This Waldorf Inspired salad is perfect for fall and winter eating. It’s creamy and luscious and great for the holiday season!
Ingredients
For the dressing:
2 super ripe pears, cut into pieces
1 cup Whole30 mayonnaise or regular mayonnaise
1 tablespoon freshly squeezed lemon juice
Kosher salt
For the Salad:
½ cup walnuts
4.5 oz greens of choice, we used soft lettuce
Kosher salt
2 ripe pears, cut into thin long slices
1 cup pomegranate seeds
¾ cup sliced celery
6 to 8 ounces good goat cheese (omit for Whole30)
Instructions
Make the dressing:
In a large, wide mouth mason jar, combine the Whole30 mayo, ripe pears, lemon juice and salt to taste. Using a stick blender, blend until smooth, for about 1 minute. Set aside.
Assemble the salad:
In a small sauté pan, over medium heat, add the walnuts. Watching them carefully and stirring constantly, toast until the walnuts are fragrant and lightly browned, for about 5 minutes.
On a large platter, evenly spread out the greens and sprinkle some salt all over. Place the pomegranate seeds, pears, celery, walnuts, and goat cheese over the greens. Top off with marinated red onions and their oil. Serve with the Creamy Pear Dressing and enjoy!
