Some of my best salads were constructed as farmers market improvs. But whatever is in season, it certainly helps tremendously to have a Magic Elixir or two already made at home waiting in the fridge. Steak Secrets: From Selection to Juicy Perfection

By the way, when you’re looking for a steak, get the best you can afford, and shop the sales. You can certainly do steak on the stovetop, but in the summer (and quite honestly, 365 days a year), I love to use the grill both for the smoky flavor and because it keeps the heat out of the kitchen. Either way, one of the keys to cooking a delicious steak is to let it rest after cooking.

Resting gives the muscle fibers time to relax and allows the juices to redistribute throughout the cut. And speaking of steak juices, remember to save them because they’re a Magic Elixir in and of themselves. You can pour the juices on a salad, back over your steak, or over rice or potatoes because steak juices are a delectable finisher.

Description

This delightful dressing is a fresh take on my classic Green Goddess recipe. Incredibly versatile, it pairs beautifully with almost anything. We’ve replaced the tarragon with chives, creating a tangy yet herbaceous flavor that enhances salads and sandwiches alike. This dressing adds the perfect touch of brightness to any dish.


Ingredients

  •   1 ¼ cup mayonnaise
  •   ¾ cup basil leaves
  •   ½ cup parsley leaves
  •   1/3 cup chopped chives
  •   ¼ cup cilantro leaves, optional
  •   3 tablespoons fresh lemon juice
  •   2 tablespoons red wine vinegar
  •   3 oil-packed anchovy filets
  •   3 garlic cloves, chopped
  •   1 tablespoon olive oil
  •   2 pinches kosher salt

Instructions

  1. Blend all the dressing ingredients to combine well. Taste the dressing and add salt, pepper, and more lemon juice for extra tang, if needed. If you want the dressing thicker, feel free to add more herbs. Store in a jar in the refrigerator until you’re ready to use it.

Notes

We made this dressing using store-bought mayonnaise but if you’re using homemade or Whole30 mayo that is looser than store-bought, add an additional ¼ cup olive oil before blending.
