My Pear Vinaigrette Dressing is both simple and delicious. It’s such an easy dressing to make, and it’s very versatile, so you can serve it on a wide range of salads. It is absolutely a Magic Elixir, magically packed with flavor, especially considering how few ingredients this salad dressing recipe calls for.

There is nothing better to bring out a salad’s flavors than a light, simple vinaigrette. We’ve paired this riff on a French vinaigrette with my new Red Rock Salad, and the bits of fresh pear make it so lovely. It’s whisked like a French vinaigrette, and remember: you always want to emulsify your olive oil. At the end, toss in half a ripe pear, which elevates the flavor to the next level, adding the perfect amount of sweetness without refined sugar. It also adds an almost magical creaminess. You will love this vinaigrette dressing!

A Simple Vinaigrette Recipe with Pears

Description

Perfect for any salad that would benefit from a kick of acid and touch of sweetness. 


Ingredients

4 tablespoons extra virgin olive oil

3 tablespoons red wine vinegar

½ teaspoon Dijon mustard

½ teaspoon kosher salt

½ teaspoon freshly ground black pepper

½ small ripe pear, diced




Instructions

In a jar or bowl, add the red wine vinegar and whisk in the extra virgin olive oil and add the dijon mustard, salt, and pepper. In a food processor, blend the pears until smooth. Add the vinegar-oil mixture to the processor and blend until incorporated. Put vinaigrette in a jar and set aside.
