Not sure what to do with the leftover ham from Easter? Look no further! My mom’s Ham Salad is the way to go. If you’ve never heard of it, it might sound a bit strange, but trust me on this one. Give it a try and tell me it’s not delicious!

How to Make Patty’s Ham Salad
To make this ham salad, you’ll want to start with some fabulous ham. We used leftovers from this Easter Ham recipe. Cube your leftovers and mince the ham in your food processor. Then, transfer it to a bowl and you are ready to assemble.

In Patty Turner’s old school ham salad, you will use minced hard boiled egg and sweet relish. This year, I decided to do a twist on the classic as well, so I replaced those ingredients with dill pickles and pickle juice. You’ll find both options below, so you can go whichever direction your heart is calling you!

Add all the ingredients into the bowl with the ham and stir to combine well. And just like that, it’s ready to go! You can enjoy it by itself, or you can treat it like a dip and have it with your favorite cracker. I love having this in the fridge and just having a few bites throughout the day. It’s one of the best post-Easter treats!

Description
Patty Turner’s Ham Salad is a staple in my house! It’s the perfect way to enjoy leftover ham, and it couldn’t be easier to make!
Ingredients
For Original Ham Salad:
1 1/4 pound ham, cut into cubes
3/4 cup – 1 cup mayo
2 tablespoon sweet relish
2 tablespoons yellow mustard
6 tablespoon minced onions
6 tablespoons minced celery
1 hard boiled egg, cubed
For Updated Ham Salad:
1 1/4 pound ham, cut into cubes
3/4 cup mayonnaise
2 tablespoon minced dill pickles
2 tablespoons yellow mustard
6 tablespoon minced onions
6 tablespoons minced celery
4 tablespoons pickle juice
Instructions
For Original Ham Salad:
Place the cubed ham in a food processor. Pulse the ham until minced completely. Pour into a large bowl. Add the mayo, sweet relish, mustard, onions, celery and eggs. Using a spatula or wooden spoon, toss to incorporate everything together.
For Updated Ham Salad:
Place the cubed ham in a food processor. Pulse the ham until minced completely. Pour into a large bowl. Add the mayo, pickles, mustard, onions, celery and pickle juice. Using a spatula or wooden spoon, toss to incorporate everything together.
Enjoy on its own or with your favorite cracker!
