My Favorite Lunch on the Go
As a gluten-free gal, a typical sandwich at lunch is not my go to. I opt instead for a snack lunch, packed with protein, some carbs, and healthy fats to keep me going. I am so delighted to be back in the kitchen with Icelandic Provisions to show you my favorite lunch on the go.

How I get my protein
I feel the most satiated at lunch when I include plenty of protein. So in this box, I have some salami slices and of course my Icelandic Provisions. I am loving the Fruit and Nut flavors for lunch! In this lunch box, I had the Strawberry and Almond flavor. Not only is it delicious, but it is also packed with protein. It has 11 grams in one serving, which is perfect for my lunch box!
Why I love Skyr
What I love about Skyr is not only the flavor but also the tradition behind it. It’s the only Skyr in the United States that uses the original 1000 year old Icelandic recipe. The milk comes from family-owned farms, and the Skyr is gluten-free, has no artificial flavors, and it’s vegetarian friendly. If you know me, you know that I love working with people who are as passionate about food as I am. I love that Icelandic Provisions takes such good care of their product from the very start.

Filling up my lunchbox
To continue filling up my lunchbox, I love using produce from my Farmer’s Market. This week, I got a bunch of berries and a peach that were the perfect additions. I also added some cucumbers and tomatoes for some lovely crunch. To go with the salami, I have my favorite Manchego cheese and gluten-free crackers. I also added a small mix of nuts to help keep my satiated longer.
Finally, I added some gluten-free cookies for dessert. The best part? I can dip all of it in my Skyr! Seriously, don’t knock it until you try it. It complements the savory food beautifully, and of course who wouldn’t want a cookie dipped in skyr?

I think sometimes people assume lunch on the go can’t be as fun, but I really think it can be amazing! Have fun with what you have on hand and don’t limit yourself. I opt for small amounts of a bunch of different items so that I have a great variety. It makes it exciting every day. And since I am just using what I have from the fridge, it takes no time at all.
