Weekday Vegetable Soup for One

I am so excited to be in the kitchen with FOND Bone Broth bringing you this Weekday Soup for One. If you’ve followed me for some time, you know that I am a huge fan of making my own broth. I had never found a store-bought one I enjoyed as much. That is, until I discovered FOND. I am totally in love with this incredible broth, and I am so excited to show you this brand new soup!

With September around the corner, kids back in school, and schedules getting busier, this is the perfect time for quick and easy lunches and dinners. With this soup for one, you will have dinner in no time. It’s a little bit of chopping, a quick sauté, and throw it all together! If you don’t want to make your own chicken, this is the perfect moment for a rotisserie chicken from the grocery store. Keep it simple!

While you can certainly use your own broth, I have to tell you that FOND really brought this soup to the next level. They have so many flavors to choose from, but I really loved using the Nopalito flavor. It has a beautiful earthy flavor with a little bit of a kick. It makes this simple soup feel so complex!

I am so excited to partner with FOND because not only is the flavor delicious, but their mission is also amazing. They use only grass-fed beef and pasture-raised chicken from carefully selected farming partners. Their broth is handmade in an 18 hour simmering process, so you know you are getting the real deal broth! Plus, their packaging is 100% plastic-free and the broths are shelf stable without any preservatives. And it’s Whole30! Honestly, what could be better?

weekday soup for one

I love taking my time to make a lovely soup or broth that simmers on the stove all day. Some days that is not a feasible path to deliciousness! This weekday soup for one uses up much less time without sacrificing deliciousness. And what I love about it is that you can make it your own! You can add more vegetables, make your own chicken, use another flavor broth, whatever you’d like. Have fun with what you have on hand. And if you’re like me, set a lovely table with flowers using your FOND jar as a vase!
