I am so excited to be in the kitchen with FOND Bone Broth bringing you this Weekday Soup for One. If you’ve followed me for some time, you know that I am a huge fan of making my own broth. I had never found a store-bought one I enjoyed as much. That is, until I discovered FOND. I am totally in love with this incredible broth, and I am so excited to show you this brand new soup!

With this soup for one, you will have dinner in no time. It’s a little bit of chopping, a quick sauté, and throw it all together! If you don’t want to make your own chicken, this is the perfect moment for a rotisserie chicken from the grocery store. Keep it simple!

While you can certainly use your own broth, I have to tell you that FOND really brought this soup to the next level. They have so many flavors to choose from, but I really loved using the Nopalito flavor. It has a beautiful earthy flavor with a little bit of a kick. It makes this simple soup feel so complex!

Description

This weekday soup for one is perfect for a busy day where you need something quick and delicious!


Ingredients

1 tablespoon clarified butter

½ cup chopped onions

½ cup chopped celery

½ cup chopped carrot

1 jar Fond Broth, flavor of choice

¼ cup frozen peas

½ cup thinly sliced green cabbage

½ cup shredded chicken, You can use store bought rotisserie chicken or make my Sizzling Everyday Roasted Chicken Breast

Kosher salt, to taste

 

Optional toppings:

Chopped avocado

Pistachio pesto

Lime wedges

Sliced green onions

Chopped cilantro


Instructions

In a small sauce pan, over medium heat, add the clarified butter. Add the onions, celery and carrots and cook until the onion is translucent, for 5 – 7 minutes.

 

Stir in your Fond Broth of choice and peas and bring to a boil over medium high heat. Stir in the cabbage and shredded chicken until warmed through. Add salt to taste. Remove from heat.

 

Garnish of with your favorite topping and enjoy!
