Teri’s Easy Onion Jam Recipe
Have you ever had Onion Jam? It’s revolutionary. This is truly the Magic Elixir we didn’t know we needed but suddenly can’t imagine being without. You’ll be blown away by its gentle sweetness and versatility. The best part of creating my own Onion Jam was that I simply combined two already awesome Magic Elixirs: my Sweet & Savory Caramelized Onions and my Red Wine Prune Reduction. Having a couple Magic Elixirs on hand will always result in the creation of extraordinary dishes. That’s because they’re the ultimate shortcut to deliciousness. When I was inspired to create an Onion Jam that incorporated California Prunes, I immediately hopped on the phone with one of my favorite food muses, Fernanda. You may remember her from @nocrumbsleft. She took the idea and ran with it. We are always on the same food page, so I absolutely love collaborating with her. While she no longer works beside me in the kitchen, we are so lucky to be living in a time when texts, phone calls, and FaceTime bridge the distance. It’s truly the upside of technology. We can send a recipe back and forth, testing it across the miles until we get to the point of perfection.


Did You Know That Prunes Make The Dreamiest Texture?
The prunes in both Magic Elixir bases offer a smooth, creamy texture as well as a subtle sweetness. I for one certainly wouldn’t feel guilty about eating it by the spoonful. The onion-y prune-forward goodness will be an incredible addition to your repertoire. Always keep some in your fridge so you can elevate any number of dishes.



Versatility Is Key!
When we made our first batch, we went crazy over its versatility. We practically made a game out of how many things we could find to use it on. The prunes, caramelized onions, balsamic vinegar, and red wine complement and balance each other perfectly. And, as if it weren’t already delectable enough, we added chopped Crispy Oven Bacon to one of our Onion Jam batches, which resulted in the most spectacular Bacon Jam. Bacon bits add the perfect amount of umami and lead the jam into savory land, infinitely upping the versatility factor. How Does Teri Enjoy Onion Jam?
The first and most obvious use for this deliciousness is simply on buttered toast, and either jam is divine on a breakfast sandwich. We absolutely loved the Onion Jam spread over sauteed salmon served with coconut rice, a surprising pairing that felt a little tropical and truly made our hearts sing. A few dollops of the Onion or Bacon Jam on a pizza are a revelation for anyone who craves all things sweet and salty. When you’re looking for a spectacular salad vinaigrette, simply mix a couple tablespoons of Onion Jam with olive oil, balsamic vinegar, garlic, and salt, then whisk or shake in a jar until emulsified. Are you making a charcuterie board? These jams are the perfect addition to pair with your cheese and meats. Absolutely everyone is going to want the recipe!

Onion Prune Jam

Description
Have you ever had Onion Jam? It’s revolutionary. This is truly the Magic Elixir we didn’t know we needed but suddenly can’t imagine being without.
Ingredients
For the Jam Base:
- 1 cup red wine
- 1 cup finely chopped California prunes
- 1 tablespoon balsamic vinegar
- 1 tablespoon coconut sugar
- Pinch of kosher salt
For the Sweet and Savory Caramelized Onion Magic Elixir
- 6 tablespoons extra–virgin olive oil
- 6 cups thinly sliced in half–moons, Spanish onions (about 2 large onions)
- 1 teaspoon kosher salt
- ½ cup California Prunes, finely chopped
Optional:
- Pinch of cayenne
Instructions
Make the Jam Base
In a medium saucepan over medium heat, add the red wine, chopped prunes, balsamic vinegar, coconut sugar, and pinch of kosher salt. Stir to combine. Turn heat to medium high and bring the sauce to a boil. Once boiling, reduce temperature to low let it cook until sauce has reduced its liquid almost completely, about 25 minutes. Remove from heat and set aside.
Make the Sweet and Savory Caramelized Onion Elixir
In a large sauté pan over medium heat, add the olive oil to the pan to warm. Reduce to medium–low and add the onions and salt to the pan. Stirring continuously and watching carefully to not scorch the onions, cook until lightly golden and starting to brown around the edges, about 15 minutes.
Avoiding any clumping, add the prunes to the pan and stirring continuously, cook until the prunes are mostly broken down and well incorporated with the onions, about 5 minutes. Transfer to a bowl and set aside.
Make the Onion Prune Jam:
Using a food processor or a blender add 1/2 a cup of the jam base and 1 cup of the onion mixture. Blend to combine and until smooth. Optional: Add a pinch or two of cayenne to give it a little kick and balance the sweet of the jam and the onions. Store in a glass container and enjoy!

Total Time: 75 minutes

Pinch of kosher salt
For the Sweet and Savory Caramelized Onion Magic Elixir
6 Tablespoons extra virgin olive oil
6 cups thinly sliced in half–moons, Spanish onions (about 2 large onions)
1 teaspoon kosher salt
½ cup California Prunes, finely chopped
Rest of the ingredients
1 (8–ounce) pack of bacon
Instructions:
Preheat oven to 375° F.
Make the Jam Base
In a medium saucepan over medium heat, add the red wine, chopped prunes, balsamic vinegar, coconut sugar, and pinch of kosher salt. Stir to combine. Turn heat to medium high and bring the sauce to a boil. Once boiling, reduce temperature to low let it cook until sauce has reduced its liquid almost completely, about 25 minutes. Remove from heat and set aside.
Make the Sweet and Savory Caramelized Onion Elixir

Using a food processor or a blender add 1/2 a cup of the jam base and 1/2 cup of the onion mixture. Blend to combine and until smooth. When about to serve, chop your crispy bacon and add 1/2 cup of chopped bacon into the mixture. Using a spatula or spoon mix to combine and serve. So delicious!
