The Best Onion & Bacon Jam Recipe

Have you ever had Onion Jam? It’s revolutionary. This is truly the Magic Elixir we didn’t know we needed but suddenly can’t imagine being without. You’ll be blown away by its gentle sweetness and versatility. The best part of creating my own Onion Jam was that I simply combined two already awesome Magic Elixirs: my Sweet & Savory Caramelized Onions and my Red Wine Prune Reduction. When you make it, I’m sure you’ll see why it’s become our most recent obsession.

Having a couple Magic Elixirs on hand will always result in the creation of extraordinary dishes. That’s because they’re the ultimate shortcut to deliciousness. When I was inspired to create an Onion Jam that incorporated California Prunes, I immediately hopped on the phone with one of my favorite food muses, Fernanda. You may remember her from @nocrumbsleft. She took the idea and ran with it. We are always on the same food page, so I absolutely love collaborating with her. While she no longer works beside me in the kitchen, we are so lucky to be living in a time when texts, phone calls, and FaceTime bridge the distance. It’s truly the upside of technology. We can send a recipe back and forth, testing it across the miles until we get to the point of perfection.

The prunes in both Magic Elixir bases offer a smooth, creamy texture as well as a subtle sweetness. I for one certainly wouldn’t feel guilty about eating it by the spoonful. The onion-y prune-forward goodness will be an incredible addition to your repertoire. Always keep some in your fridge so you can elevate any number of dishes.

 Prunes, caramelized onions, balsamic vinegar, and red wine complement and balance each other perfectly. And, as if it weren’t already delectable enough, we added chopped Crispy Oven Bacon to one of our Onion Jam batches, which resulted in the most spectacular Bacon Jam. Bacon bits add the perfect amount of umami and lead the jam into savory land, infinitely upping the versatility factor.

The first and most obvious use for this deliciousness is simply on buttered toast, and either jam is divine on a breakfast sandwich. We absolutely loved the Onion Jam spread over sauteed salmon served with coconut rice, a surprising pairing that felt a little tropical and truly made our hearts sing. A few dollops of the Onion or Bacon Jam on a pizza are a revelation for anyone who craves all things sweet and salty. When you’re looking for a spectacular salad vinaigrette, simply mix a couple tablespoons of Onion Jam with olive oil, balsamic vinegar, garlic, and salt, then whisk or shake in a jar until emulsified. Are you making a charcuterie board? These jams are the perfect addition to pair with your cheese and meats. Absolutely everyone is going to want the recipe!
