A lot of you know that I swear by my Everyday Roasted Chicken Breasts. They are the secret ingredient to so many delicious meals because they always create the juiciest chicken. I use it for chicken salad, soups, my salads with greens, and so much more. To take it up a notch, I took some of my favorite spice blends from The Spice House and added them to the chicken to make spiced chicken breasts. The result is pure magic, and I can’t wait for you to try.

What Spices to Use on Your Chicken Breasts

I have totally fallen in love with The Spice House’s spice blends, so it was hard to narrow this down to just four. I decided to choose four that would all bring totally different flavor profiles so that when you make them, there’s something for everyone!

First, we used the Lake Shore Drive blend. This brought a really great onion and herb flavor to the chicken. If you make this one, the blend would also be delicious on vegetables to go with the spiced chicken breasts. It’s perfect for a simple dinner that’s packed with a lot of flavor. We also used the Greektown Mediterranean blend. It is packed with Greek inspired flavors. This blend is salt forward, so it made the chicken so juicy and tasty with a crispy skin. What dreams are made of!

The Vulcan’s Fire Salt Spice Blend has quickly become a go to for me. It has a beautiful mix of chile paste, salt, lime, and paprika to create an amazing spice. It made for amazing spiced chicken breasts, but it’s so versatile. This blend can take any dish up a notch.

Last but not least, we did the Oaxacan Ancho Coffee Rub blend. I don’t want to pick favorites, but this one might take the cake. The coffee in this blend just deepens all of the flavors and goes so well with the garlicky, peppery goodness of the other spices. This one does not have salt, so since we are using it on spiced chicken breasts, we decided to add some kosher salt as well. The blend would be amazing with so many different meats like pork, ribs, and salmon. Trust me, you’ll want it on everything.

Why To Make These Chicken Breasts

What’s so wonderful about these spiced chicken breasts is that they are easy to make. You can make them altogether. If you’re meal prepping for the week but want some variety, these are perfect. Put them all on the same pan, spice each one how you’d like, and roast! It doesn’t sacrifice any flavor to do it this way. Then, you have four totally different options for meals all week. Or, if you’re making it for dinner, there will be something different for everyone! In the recipe below, we shared all the different ways we enjoyed our chicken.

Four Everyday Roasted Spiced Chicken Breasts

Description

These spiced chicken breasts are perfect for quick, easy, and delicious meal prep or weeknight eating. You’ll never want chicken another way!


Ingredients

4 bone-in, skin-on chicken breasts

4 teaspoons extra virgin olive oil, divided

2 teaspoons Spice House Lake Shore Drive Spice Blend

1 ½ teaspoons Spice House Greektown Mediterranean Spice Blend

1 ½ teaspoons Spice House Vulcan’s Fire Salt Spice Blend

1 ½ teaspoons Spice House Oaxacan Ancho Coffee Rub Spice Blend

½ teaspoon Kosher salt


Instructions

Preheat oven to 375°F. Prepare a parchment-lined baking sheet.

 

Place the chicken breasts on the baking sheet. Add 1 teaspoon of olive oil on each chicken breast and use your hands to coat the entire breasts. On the first chicken breast, season with 2 teaspoons of the Lake Shore Drive Spice Blend, coating the entire breast. For the second breast, season with the Greek Town blend, and use the Vulcan’s Fire Salt Spice blends on the third breast. Finally, in a small bowl, combine the Oaxacan Ancho Coffee Rub and salt. Season the fourth breast with this mixture.

 

Bake all four breasts in the oven for about 35 minutes. Remove and, using a brush, baste the top of the chicken breasts with their juices. Return to the oven for 5 minutes.

 

Remove from oven. If not browned enough, baste again, turn up the oven temperature to 400°F, and bake for another 10 minutes.

 

For the Greek Town chicken breast, we served it on a delicious Greek salad. In a bowl we add a bed of romaine lettuce, cherry tomatoes, marinated red onions, olives, pepperoncini and feta cheese. We used Marinated Red Onion oil as a dressing and seasoned this lovely salad with more of the Greek town spice.

 

We made a wonderful chicken salad with the Lake Shore Drive chicken breast, and added more of the spice blend to bump up the flavor. So wonderful to have in the fridge as a snack and meal prep during the week.

 

For the Vulcan’s Fire Salt chicken breast, we created a juicy and spicy sandwich. Spread mayonnaise (or use your favorite magical elixir) on a toasted piece of bread, then layer greens and your cheese of choice. We used crumble goat cheese to balance the spiciness of the chicken. So delicious!

 

For the Oaxacan Ancho Coffee Rub chicken breast, we simply served it with rice and broccolini. The perfect way to enjoy the chicken breast right out of the oven.
