I’m so delighted to introduce the Teri Collins! This is my take on a Tom Collins, and of course, I’m adding Spindrift! Spindrift is launching three new flavors of Lemonade including Strawberry, Lime, and Pink! This Teri Collins features the Pink Lemonade, and be on the lookout for more drinks featuring the Lime and Strawberry.

Spindrift Lemonade is not on the shelves of stores until March 8th, but if you sign up to be a drifter, you will have the chance to get one of the very first packs of Lemonade! I love being a part of the drifter community because you get to find out about all of the fantastic things happening at Spindrift first. A Tom Collins is traditionally made with gin, lemon juice, simple syrup, and club soda. For the Teri Collins, we are serving it over lemon and Spindrift ice cubes, with cherry simple syrup and topped with Spindrift Pink Lemonade. If you are not a fan of gin, I bet this would be just lovely with vodka or tequila as well! Or, you can check out my Teri-tini for a delicious vodka drink.

The Pink Lemonade is made with cherries and raspberries, so the little bit of cherry simple syrup brings out those delicious cherry flavors. Simple syrup is easy to make, and making your own is so much better than store-bought. And you can make it in whatever quantity you need because each ingredient is equal parts. Check the recipe below for the details on how to make the cherry simple syrup.

One thing to know about a Teri Collins (or a Tom Collins) is what gin you are using. There are a few different kinds of gin that have very distinct flavors. For a Tom Collins, Old Tom gin is traditionally used, which is a sweeter, richer gin. Many people now use London Dry gin, which has a juniper-forward taste and that is what you’ll find in the Teri Collins. You could use another style of gin, but just know it will result in a different taste!

Teri Collins with Spindrift Pink Lemonade

Description

This drink is perfect if you are looking to sip on summer! It’s light, refreshing, and delicious!


Ingredients

For the drink: 

Spindrift and Lemon ice cubes (recipe below)
2 ounces London Dry Gin (I used Tanqueray)
1 ounce fresh lemon juice
1/2 ounce cherry simple syrup (recipe below)
4-6 ounces Spindrift Pink Lemonade, adjust amount to taste
1 lemon wheel, for garnish

For the Spindrift and Lemon Ice Cubes:

1 Spindrift Pink Lemonade
1/2 cup fresh lemon juice

For the cherry simple syrup:

1/2 cup water
1/2 cup sugar (I used castor, but you can use any you’d like)
1/2 cup dark sweet cherries, frozen (fresh works as well)


Instructions

For the Spindrift and Lemon Ice Cubes:

Fill half of an ice tray with Spindrift Pink Lemonade. Only fill 2/3 of the way because they will expand.

Fill the second half of the tray with the fresh lemon juice. Only fill 2/3 of the way because they will expand.

Allow to freeze for at least 6 hours. 

For the cherry simple syrup:

Combine water and sugar in a saucepan over medium-low heat and stir continuously.

After the sugar has begun to dissolve, about two minutes, add the cherries and stir. 

Allow to simmer while the cherry juice releases into the sugar water mixture, approximately 5 minutes. 

Turn off the heat and strain the simple syrup into a glass to remove the cherries. Allow the syrup to cool. 

For the drink:

In a Collins glass, add Spindrift and Lemon Ice Cubes to the top. Pour the gin, lemon juice, Spindrift Pink Lemonade, and simple syrup into the glass and stir.

Cut a line from the middle of the lemon wheel to the edge. Take the two freshly cut sides of the lemon and twist them in opposite directions to create an S-shape. Thread the lemon with a toothpick to hold the shape, and place it on top of the glass to garnish. Enjoy!
