Icelandic Provisions Skyr Smoothie

It’s the dog days of summer and with the heat outside, I’m in the mood for cool and easy dishes that don’t need to be cooked.  Smoothies!  I have been in the kitchen with Icelandic Provisions working on cool and refreshing recipes. And with @nocrumbsleft_kid on her way out the door I’ve been teaching her some basics on how to put an inexpensive meal on the table by giving her some tips and tricks for simple, nutritious and delicious weekday breakfasts, lunches and dinners.  These smoothies with Skyr make a great breakfast, lunch or dinner on a hot day and are off the hook delicious. What I have told @nocrumbsleft_kid is that if you can find something that is delicious, nutritious, simple and inexpensive, you’ve hit the lottery!

Skyr PrepIf you are asking yourself, “What is Skyr?”  Skyr (pronounced skier) is a cultured dairy product.  Cultures in Skyr are like hops in beer, they are what determine it’s flavor and texture.  As a matter of fact, unlike others in the style of Skyr, Icelandic Provisions is the only one in America that comes from original Icelandic cultures that have been treasured and preserved for hundreds of years, making it a truly unique and special product.  Skyr is to Iceland as Champagne is to France and Icelandic Provisions has been a standard dairy provision for Icelanders for over 1000 years.  I am so proud to partner with Icelandic Provisions since they are committed to making a clean, healthful product that is non-GMO.  With the combination of a lot less sugar, more protein than yogurt and such an amazing smooth and creamy texture,  Icelandic Provisions Skyr is the perfect ingredient for a fantastic smoothie, creating the perfect combination of creamy, refreshing, smooth and delicious.

  • 1 container of Peach Cloudberry Icelandic Provisions Skyr
  • 2 tbsp coconut oil
  • 1/2 cup frozen peaches
  • 1/2 cup fresh pineapple
  • 1 Banana
  • ¾ cup of ice
  • A generous handful of spinach

Be sure to put the ingredients in the blender in this order.  Skyr, coconut oil, frozen fruit banana (break into a few pieces) and ice in blender and blend until smooth. Then add spinach and blend again. Pour into a glass and enjoy.

When making a smoothie, always place your liquids in the blender first, then your fruit, blend and then add ice and greens and blend again.

There are so many options for flavors and fruit combinations but the basic rule of thumb for a great smoothie is:

  • 1 container of Icelandic Provisions Skyr
  • 2 tbsp coconut oil
  • 1 cup of frozen fruit
  • 1 Banana
  • ¾ cup of ice
  • A generous handful of spinach

For a non dairy version, replace Skyr with ½ cup coconut milk

  1. Looks delicious – thanks for sharing, Teri!

I’m so curious about the double blend suggestion. Usually I just throw the spinach in with everything else. Forgive my ignorance but what’s the difference?

  2. So I don’t have ice. Can I freeze the banana and use that instead of ice?
