Whole30 Caprese

September is the perfect time for a lovely Caprese salad, so I wanted to create one delicious enough that you don’t even miss the cheese… Hello, Hearts of Palm! With avocado, cucumbers and olives, it’s fun to assemble. Be sure to use tomatoes large and small, and of different varieties, for even more of a treat. By the way, the Balsamic Basil Mint Magic Elixir is off the hook! It would be a fun alternative with a Chimichurri steak. This is what we call an ingredient recipe. It’s meant to serve as an inspiration. My Whole30 philosophy is to concentrate on what I can eat, rather than what I can’t.

Whole30 Caprese


Salad Ingredients

  • Hearts of palm
  • Tomatoes
  • Cucumbers
  • Olives
  • Avocados

Balsamic Basil Mint Magic Elixir


  • ¼ cup olive oil
  • 1 Tbsp high quality balsamic vinegar
  • ¼ cup fresh mint
  • 1 cup basil
  • Kosher salt and freshly ground black pepper to taste

Cut your ingredients into beautiful pieces and assemble on a platter. Think of it as an art project.
