With avocado, cucumbers and olives, it’s fun to assemble. Be sure to use tomatoes large and small, and of different varieties, for even more of a treat. By the way, the Balsamic Basil Mint Dressing would be a fun alternative with a Chimichurri steak. This is what we call an ingredient recipe. It’s meant to serve as an inspiration. For the salad:
- Hearts of palm
For the dressing:
- ¼ cup extra virgin olive oil
- 1 Tbsp high-quality balsamic vinegar
- ¼ cup fresh mint, chopped
- 1 cup basil, chopped
- Kosher salt and freshly ground black pepper to taste
For the dressing, blend all of the ingredients together.
Cut your ingredients into beautiful pieces and assemble on a platter. Think of it as an art project.

my dressing was green yours still looks like balsamic vinegar color. was I not supposed to blend the basil and mint ?
