Whole30 Caprese
September is the perfect time for a lovely Caprese salad, so I wanted to create one delicious enough that you don’t even miss the cheese…Hello, Hearts of Palm! With avocado, cucumbers and olives, it’s fun to assemble. Be sure to use tomatoes large and small, and of different varieties, for even more of a treat. By the way, the Balsamic Basil Mint Dressing would be a fun alternative with a Chimichurri steak. This is what we call an ingredient recipe. It’s meant to serve as an inspiration. My Whole30 philosophy is to concentrate on what I can eat, rather than what I can’t.

You will not miss the cheese in this delicious Whole30 take on Caprese Salad!
Ingredients
For the salad:
- Hearts of palm
- Tomatoes
- Cucumbers
- Olives
- Avocados
For the dressing:
- ¼ cup extra virgin olive oil
- 1 Tbsp high-quality balsamic vinegar
- ¼ cup fresh mint, chopped
- 1 cup basil, chopped
- Kosher salt and freshly ground black pepper to taste
Instructions
For the dressing, blend all of the ingredients together.
Cut your ingredients into beautiful pieces and assemble on a platter. Think of it as an art project.

my dressing was green yours still looks like balsamic vinegar color. was I not supposed to blend the basil and mint ?
There is no supposed to… And you can simply chop it or purée
