Roasted Carrot, Red Onion, Fennel and Mint Salad

Here’s a spectacular side dish for Thanksgiving from a recipe I discovered last year in Bon Appetit Magazine. By the way, if you are doing a vegan Thanksgiving, this is ideal. This roasted carrot, red onion, fennel, mint salad is fabulous. The dressing has a magic combination of coriander, sunflower seeds, hot paprika and…WOW! Dynamite, and I mean it! A great addition to my repertoire for Thanksgiving but what an amazing side dish for weeknight dinners.
