You can thank me later for this delicious ice cream pie! You know I am not much of a baker, so I absolutely love that this pie is so simple and no-cook. You can choose your favorite ice cream and get to making this amazing summer treat.

Making the crust

The crust is the first step for this pie. Take your cookies and pulse until they are crumbled. I used gluten-free cookies, but of course, you could use gluten-full as well. You want to completely crumble the cookies, then slowly add the melted butter.

Once the butter is incorporated, then it’s time to build the crust. Take your time on this to make sure it’s a good, even layer! I like to push it up the sides to really get it everywhere. I think the crust is so delicious, so I want it everywhere!

Once your ice cream pie’s crust is ready, stick it in the freezer to harden. And if you can believe it, we are nearly there with this dish already.

Add your ice cream

Once the crust has firmed up, it’s time to add your ice cream! You can use any flavor you would like for this. If it would be delicious with a cookie, it will be great in this pie! We had some fun testing this out with different flavors. Get creative with it! It could even be fun to do multiple flavors in one.

Depending on the brand of ice cream, you might want to let it sit out for a few minutes to soften. This can help you work with it to smooth it out in the crust. Once you add the ice cream to the crust, use a spatula to create an even layer in the pan. Once you are done, stick it back in the freezer!

I still absolutely love a crumble, but this is my new go-to for an easy summer dessert. Plus, you can always add some fun toppings like chocolate shavings or fresh fruit to take it over the top.

Description

This gluten-free ice cream pie is the perfect dessert for all summer long!


Ingredients

24 gluten-free chocolate creme sandwich cookies, we used Goodie Girl

5 tablespoons unsalted butter, melted

2 pints of ice cream, your choice (delicious with coconut almond chocolate, chocolate peanut butter, strawberry or butter pecan)

Chocolate bar shavings, for garnish


Instructions

In a food processor, pulse the chocolate creme sandwiches until completely crumbled. Pour in the melted butter and continue to pulse until all is incorporated.

 

Transfer the cookie and butter mixture into a 9-inch pie pan, disposable aluminum or glass is fine. Form the crust by using your fingers to press the cookie mixture onto the bottom and sides of the pan. You can press it just up to the rim or go a bit over. Once the crust is ready, place in the freezer until hardened, for 15 – 20 minutes.

 

Remove from the freezer. Working quickly, scoop the ice cream onto the crust and use a spatula to smooth out the ice cream evenly over the crust. Return the pie to the freezer until completely frozen,  30 – 40 minutes or overnight.

 

Remove, and add the chocolate shavings or garnish of choice and serve.
