French Toast Platter with Icelandic Provisions Skyr
With the holidays here, I wanted to share an idea that I absolutely love! It’s perfect for a holiday morning when the family is gathering around the table and I’m so delighted to be in the kitchen with Icelandic Provisions Skyr and their new Krimi. I’ve come up with a fantastic crunchy gluten-free French toast that is absolutely delightful topped with Icelandic Provisions Krimi Skyr.
If you haven’t discovered Icelandic Provisions Skyr yet, now is definitely the time! It’s been an Icelandic tradition for nearly 1000 years! Skyr is really to Iceland what Champagne is to France. It’s unique and delicious taste comes from its heirloom cultures that have been handed down from generation to generation for hundreds of years. It’s made with 4x the milk of regular yogurt — so it’s packed with way more protein, but it also has much less sugar. And the new Krimi is made with whole milk for extra creaminess. Icelandic Provisions Skyr is GMO free, gluten free and kosher certified.
The sky is the limit with this gorgeous platter, so pair it with whatever you want. Here we have bacon, Canadian Bacon, Almond butter and winter fruits—they’re seasonal, so feel free to change it up. Then put it out and let everyone pick what they want as you gather around the table and enjoy.

French Toast, a variety of fruits, bacon, ham and Icelandic Provisions Krimi Skyr
Ingredients
For the platter
Any seasonal fruits that you love – we used Persimmon, pomegranate, pears, apples, clementines
Icelandic Provisions Krimi Skyr – Vanilla, Mixed Berry, and Strawberry Rhubarb
Maple syrup
Almond butter
Ham
Oven bacon
For the French toast
5 slices of gluten free bread (we used LaBrea GF, multigrain and white sandwich bread)
3 whole eggs
¼ cup milk
1 tsp vanilla
½ tsp cinnamon
1 ½ tbsp sugar, divided
1 stick butter, melted
1 cup gluten-free panko breadcrumbs
Instructions
In a shallow bowl, whisk together the eggs, milk, half of the sugar and the cinnamon. Set aside.
In a separate shallow bowl, combine the panko and the remaining sugar. Add 2 Tbsp of the melted butter and stir until incorporated.
In a large, non-stick skillet over low to medium heat, warm the remaining melted butter.
While the butter is warming up, dredge each piece of bread in the egg mixture. Shake off the excess egg and transfer to the bread crumb mixture. Using the other hand, turn the bread until coated on both sides with the bread crumb mixture. Then place the first side down in the skillet for 5-6 minutes on medium to medium low heat. Flip and cook the other side for 2-3 minutes. Watch closely though, so they don’t burn.
Arrange the French toast, Skyr, meats, fruit, and condiments on your board or platter. Plate up the French toast with a big dollop of Krimi Skyr and your favorite accompaniments.
