This Whole30 Lettuce Wrap with chicken is a perfect lunch on the go! It’s easy to whip together, and it is so satisfying without feeling too heavy.
Parchment paper or wax paper
1 head iceberg lettuce
2 tablespoons Tessemae’s Organic Everything Bagel Ranch
½ to 1 teaspoon Tessemae’s Yellow Mustard
4 to 5 ounces thinly sliced chicken breast, (click for Everyday Roasted Chicken Breast, or use store bought or rotisserie chicken)
½ avocado, thinly sliced
2 to 3 cherry tomatoes, sliced
3 to 4 pepperoncini peppers, whole or sliced
Place a long piece of parchment paper on a flat surface. Cut out the hard core of the iceberg. Carefully separate 4 to 6 large iceberg lettuce leaves and place them flat on the parchment paper, with the edges overlapping and the ends pointing toward the middle.
In the center of the lettuce, spread Tessemae’s Everything Bagel Ranch and mustard. Layer the chicken breast, marinated red onions, avocado, cherry tomatoes, pepperoncini peppers, and sprinkle a pinch of salt. Make sure everything is centered.
Carefully, and using both of your hands, begin to roll it up into a wrap. Use the parchment paper to help you roll, but continuously pull the paper out. Fold the edges inward while rolling, until the sandwich is completely wrapped, like a burrito. Using a serrated knife, slice the sandwich in half and enjoy!
