Description
These Smoky Chicken Patty Bowls are one of my favorite easy, weeknight meals. They couldn’t be easier to throw together, and you can make a double batch to have it ready for the week! Pair it with your favorite Magic Elixir and enjoy all week long.
Ingredients
- 1 ½ pounds ground chicken, one pound ground dark meat and half pound ground breast
- 1 cup spinach chopped coarsely
- 1 red pepper (or color of your choice), finely chopped
- ½ medium yellow onion, finely chopped
- ¼ cup chopped fresh flat-leaf parsley
- Handful of finely chopped chives (if desired)
- 4 cloves garlic, finely chopped
- 1 tablespoon smoked paprika
- 2 – 3 teaspoons Kosher salt, plus more
- Black pepper as desired
- 2 tablespoons extra virgin olive oil, plus more to sauté
- Romaine, ribonned
- Red cabbage, thinly sliced
- Marinated Red Onions
- sliced avocados
- pickles
- cherry tomatoes
- Microgreens, optional
- Magic Elixir or dressing of choice
Instructions
- Place the chicken in a large mixing bowl then add the onion, red pepper, spinach, parsley, garlic and combine well. Sprinkle the smoked paprika, salt, and black pepper over the mixture and mix to combine.
- Drizzle the chicken mixture with 2 tablespoons olive oil, mix it in and form six patties, then place them in well-oiled pan on medium heat. Cook 5 minutes on each side.
- Serve the smoky chicken patties over a bed of romaine and red cabbage and sprinkle the greens with salt. Top with Marinated Red Onions, sliced avocados, pickles, cherry tomatoes, microgreens (if using), and Magic Elixir or dressing of choice.
