Everyday Roasted Chicken Breasts

- 2 chicken breasts bone-in and skin-on
- 1 1/2 teaspoons extra virgin olive oil
- 1 1/2 teaspoons kosher salt
- 1 teaspoon black pepper freshly ground
- 1 teaspoon sumac optional
Preheat oven to 375F.
Rub every crevice generously with olive oil, then sprinkle with plenty of kosher salt and black pepper.
Bake for about 35 minutes, then brush the top of the chicken with the juices. Return to oven for 5 minutes to brown the top.
Remove from oven. If it isn’t brown enough at this point, baste again, turn up the oven temp to 400F, and bake for another 10 minutes.
*If you have a convection setting on your oven, turn it on for the last ten minutes or so of cooking to get that deep brown skin.
- Season everywhere on your chicken breasts for the best flavor.
- Don't skip the basting step, and don't be afraid to baste an extra time or two! It makes a big difference in the final product.
