I admit it: I do love a complicated recipe, and I love spending time in the kitchen. It’s quite simply who I am! But recently I’ve been enjoying simpler recipes. These simple recipes are also a great way to keep the kitchen cool on hot summer days. We have assembled over a dozen of our favorite deliciously easy, little-to-no-cook meal recipes for nutrient-dense meals.

One of our favorites is this Tuna-cado rice bowl. It’s currently having a big viral moment. Frankly, I wasn’t a fan of this dish at first. But I made it for my friend Michelle, and she said it was the most satisfying thing she’s ever eaten, so I reconsidered.

This is a soul-satisfying salad. It’s perfect on a leisurely Sunday. It offers a bite of everything from delicious meats, cheeses, and greens, enhanced by a wonderful dressing.

As a gal who’s spent some time in Italy, I absolutely love mortadella as a food group. It’s pretty delicious on just about any sandwich, and for me it’s simply the best. My Burrata and Mortadella Sub is just one idea, but there are so many variations to try.

I love hummus and babaganoush, and I purchase mine locally from Chicago’s Middle Eastern Bakery because there is simply none better. I spread the hummus on a dish and add radish, cucumber, tomato, and a light dressing. The full recipe is on page 131 of my cookbook. There’s nothing better in the summer than a big salad moment. This Green Cabbage Salad is a gorgeous one with orange, carrots, a spectacular Hoisin inspired dressing, and rotisserie chicken, which you can easily pick up at the grocery store. It is definitely a high fiber, high protein meal, and it’s very easy to bring and serve at a potluck. Be sure to save the bones of the rotisserie chicken for your next bone broth!

I love a Greek salad in every form, and I am absolutely a feta enthusiast. We have a local shop where we get the most amazing pita, and it’s easy enough to pick up the ingredients and wrap up your favorite Greek salad. What a wonderful Greek Salad wrap!
