Description
This old school meatloaf is the perfect comfort meal.
Ingredients
For the Glaze:
- 1 cup ketchup
- 1/4 tablespoons brown sugar
- 3 tablespoon plus 1 teaspoon apple cider vinegar
- 1/2 teaspoon hot sauce
For the Meatloaf:
- 1 pound ground beef
- 1/2 pound ground veal
- 1/2 pound ground pork
- 1 cup finely chopped yellow onion
- 3/4 cup pureed fresh gluten free white bread crumbs
- 3/4 cup chopped fresh parsley
- 1/4 cup chopped fresh chives
- 2 tablespoons chopped fresh basil
- 2 large eggs
- 1 1/2 teaspoons salt
- 1/2 teaspoon freshly ground black pepper
- 8 uncooked bacon slices
Instructions
- Preheat oven to 350°F.
- Make the glaze: In a small bowl, stir together the ketchup, brown sugar, vinegar, and hot sauce until completely incorporated.
- In a large bowl, mix all the meat loaf ingredients together using your hands. Form it into a 8 by 6-inch loaf on a baking sheet. Cover the loaf with the uncooked bacon slices, laying them horizontally, slightly overlapping, and tucking the ends underneath.
- Bake for 45 minutes. Remove from the oven and brush on half of the glaze. Return to the oven and cook until done, about 15 minutes or until an instant read thermometer reads 160°F when inserted in the center. Remove and allow it to rest, tented with foil, for 15 minutes before slicing and serving it with the remaining glaze on the side.
Notes
*If you would like to omit the veal, substitute additional beef and pork.
