The Best Creamy Cold Brew Tiramisu (Gluten Free option)

Description

This tiramisu is dangerously easy to make and absolutely delicious! It’s the perfect dessert for any party.


Ingredients

1 (16-ounce) heavy whipping cream

6 1/2 tablespoons pure cane sugar, divided

4 (4.4-ounce) Icelandic Provisions Cold Brew Coffee Extra Creamy Skyr

2 1/4 cups water

6 tablespoons coffee liqueur, we used Kahlua

2 tablespoons plus 1 teaspoon instant espresso powder

2 (7-ounce) packages of Lady Fingers, we used the gluten-free Lady Finger recipe from Gluten Free Palate

Unsweetened cocoa powder, to garnish

Chocolate Syrup, to garnish

We use an 8×8 or 9×9-inch baking dish or casserole, but there is enough filling to use a larger size pan if you prefer!


Instructions

In a large bowl, add the heavy whipping cream and 2 tablespoons of sugar. Using a hand mixer, whip the heaving cream on high until it is thickened up. Using a spatula, add the Icelandic Provisions Cold Brew Extra Creamy Skyr. Fold in until it is completely incorporated and set aside.

 

In a small shallow bowl, add the water, coffee liqueur, 4 1/2 tablespoons of sugar, and instant espresso powder. Stir and set aside.

 

Note: When using homemade Gluten-Free lady fingers, soak longer than regular lady fingers because they are naturally more dense. When using store bought lady fingers, move quickly because they absorb quicker and tend to fall apart.

 

Working quickly, one at a time, add the ladyfingers into the coffee and liquor mixture, until it has absorbed the liquid. Place half of the soaked lady fingers in a single layer in the baking dish. Pour half of the Icelandic Provision and whipping cream mixture on a single layer on top of the ladyfingers. Repeat this procedure by soaking the lady fingers and placing them in a single layer. Add the remaining skyr and whipping cream mixture on top. Use a spatula to help you spread it evenly. Cover and place in the fridge for about 4 hours or overnight.

 

Before serving, using a sifter, sprinkle a couple of tablespoons of cocoa powder on top of the tiramisu. Drizzle chocolate syrup on top or serve on the side. Enjoy!
