This is a new favorite: Italian Turkey Noodle Soup with hearts of palm noodles. Absolutely ideal for fall, this soup has been such a home run with our recipe testers. Perfect if you’re wanting a noodle but eating low carb! Here’s our hack: rather than making meatballs from scratch, buy a compliant Italian sausage, remove it from the casing, and form little meatballs. It’s easy to make a quick Italian sausage by adding fennel, red pepper flakes, salt, pepper, and garlic powder to ground turkey and forming yummy little meatballs, and it would be delicious to use pork or chicken instead.

One of my favorite tips: before adding to the soup, remove the pasta from its pouch and set it in a colander under cool running water for a full minute then set aside to drain. You’ll love these vegetable noodles, and you’ll love being able to whip this dinner together in no time. Crushed tomatoes, chicken stock, carrots, celery, onions, sprinkled with dried oregano and basil and topped with fresh herbs. Whole30 Turkey Noodle Soup

Ingredients

Two 12-ounce bags hearts of palm noodles

1½  tablespoons extra virgin olive oil

1¼ pounds Whole30 compliant Italian sausage, turkey or pork, formed into .5 ounce meatballs (to make your own Whole30 compliant Italian sausage, see below)

2 cups sliced carrots

1 cup chopped onion

1 cup sliced celery

½ teaspoon kosher salt, plus more to taste

2 tablespoons diced garlic

2 cups green beans cut into 1 inch pieces

8 cups chicken stock, warmed

1 teaspoon dried basil

1 teaspoon dried oregano

1 tablespoon tomato paste

2 cups crushed tomatoes

If you are doing Whole30 and can’t find an Italian Whole30 compliant sausage, here is a hack on how to make it. Just as easy as store-bought. If you use pork sausage, they are fattier than Turkey, so you can use less oil.

 

Homemade Whole30 Compliant Italian Sausage

1 pound ground pork

½ teaspoon dried basil

½ teaspoon dried oregano

1 teaspoon dried whole fennel

¼ teaspoon kosher salt


Instructions

If you are making your own Italian Sausage: In a large bowl, combine all ingredients and mix well.

 

Place the noodles in a colander and rinse well with cold water for about 1 minute. Set aside.

 

In a large Dutch oven or stock pot over medium heat, heat the olive oil. Cooking in batches if needed, place the meatballs in the pan in a single layer if possible and cook until browned and crispy, about 6-10 minutes total. As the meatballs finish cooking, transfer to a large bowl.

 

In the same pot, add the carrots, onions, celery, and ½ teaspoon salt and, stirring occasionally, sauté until soft, about 3 minutes. Add the garlic, stir to combine, and cook for 1 minute. Increase the heat to high, add the green beans, chicken stock, basil, and oregano, and stir to bring to a boil. Reduce the heat to a simmer and continue to cook for about 5 minutes, or until the green beans are crunchy, but not overcooked. Add the tomato paste and the crushed tomatoes, and stirring to combine, bring to a boil. Return the noodles and meatballs to the pan, stir to combine and serve. Enjoy!
