Crudités are the centerpiece of any gathering, not only because they’re delicious and appealing to all kinds of eaters, but super easy to put together too. I love a bit of crunch and color, so I fill my crudités platters with in-season vegetables. And as a gal who loves a dip, I always include a few different Magic Elixirs for dipping.

Here I’ve used Green Goddess and Skyr Ranch for dipping, but you can change it up with something different you like. If you’re looking for something Whole30, try my Smoky Red Pepper Sauce, Pistachio Pesto, Creamy Horseradish Sauce, or Marinated Red Onions. If you want to indulge a little, use the Skyr Ranch pictured here, or any of my many Magic Elixirs.

Here I used radishes, carrots, red and orange peppers, jicama, tomatoes, celery, cucumber, and Nicoise Olives, then arranged them beautifully on my Tie Dye Platter. It’s so easy to switch it up and use any local and in-season vegetables you have or love. Add some protein, like salami or Everyday Roasted Chicken Breast. Add cheese, gluten-free crackers, or any of your favorite items and Dips.

Description

Crudités Platter can be done in so many different ways. The sky is the limit. Just pick your favorite vegetables and dips and create a gorgeous spread. It’s perfect for any kind of celebration, or just a night-in with delicious snacks!


Ingredients

You can use anything you love that is in-season and local. Here I used: 

Radishes
Carrots
Red peppers
Orange peppers
Jicama
Cherry tomatoes
Celery
Cucumbers
Nicoise Olives

For the Green Goddess Dressing

3 oil-packed anchovy filets 
3 garlic cloves, chopped fine 
1 cup Whole30 mayo 
2 handfuls basil leaves 
4 Tbsps fresh tarragon leaves 
¼ cup parsley 
3 Tbsps lemon juice 
5 Tbsps olive oil 
2 Tbsps red wine vinegar 
2 pinches salt 
1/2 of a ripe avocado (if you are making a dip)

For the Icelandic Provisions Skyr Ranch Dressing:

2 scallions, white and green parts, chopped
1/2 cup total, fresh basil and parsley
2 Tbsp chives, chopped
4 garlic cloves, pressed
2 Tbsp white wine vinegar
1 Tbsp olive oil
2 tsp Dijon mustard
1 1/2 tsp kosher salt
3/4 tsp ground black pepper
3/4 cup mayonnaise
2 containers Icelandic Provisions Plain Skyr


Instructions

Make the Green Goddess Dressing

To make the dressing: Blend all the dressing ingredients to combine well. Taste the dressing and add salt, pepper, and more lemon juice for extra tang, if needed. 

To make the dip: Combine one full batch of Green Goddess dressing with half of an avocado and blend well.

Make the Skyr Ranch

For the ranch dressing:

Chop the scallions and chives.  Place into the food processor along with the basil and parsley.  Pulse until the herbs are chopped and combined.  Remove from the food processor bowl and set aside.  There will be residual bits of the herbs in the food processor bowl, go ahead and leave them in there.

Place the garlic, vinegar, olive oil, mustard, salt and pepper, mayonnaise and Skyr in the food processor.  Blend until everything is well combined and creamy.

Then, pour the mixture into a bowl and stir the chopped herbs in with a spoon.

Store in an airtight container in the refrigerator for 5-6 days.Arrange the Crudités beautifully in groups on your platter. Add the Green Goddess and Skyr Ranch (or whatever dips you are making) to the platter and serve.
