What is better than California Grown? I am fortunate enough to live part of the year in the leading agricultural state in the country and the sole U.S. producer of almonds, pistachios, pomegranates, artichokes, figs and olives! 19.8 million acres of land in The Golden State is dedicated to farming, and I love that 90% of the farms are family-owned.  So, when you buy produce, olive oil, nuts, honey and more from California, you are supporting US farms and farmers.  

Like me, Californians are hard workers, and I’m awed by the farmers, workers, ranchers, ranch hands and fisher people who work 24/7/365 to provide food, fiber and foliage for the world. California grows more than 400 different products and produces more than a third of the country’s vegetables and two-thirds of the country’s fruits. It is truly a gift to visit the California farmers’ markets and get to know the people who grow my food. 

This luxurious granola is a love letter to California Grown farmers.  Filled with almonds, dried fruit and luscious olive oil and honey it is crunchy, lightly sweet and delicious.  Perfect on fresh fruit or with yogurt or on its own.  I also love to fill mason jars and give it to friends, teachers, family and loved ones as a homemade gift from the heart!

Sheet Pan Granola with California Grown

Ingredients

  •   7 Tbsp olive oil 
  •   7 Tbsp honey 
  •   ¾ tsp kosher salt 
  •   3 cups rolled oats 
  •   1 cup slivered almonds
  •   1 cup walnuts, snapped in half
  •   1 cup pecans, snapped in half
  •   1 cup shredded sweetened coconut 
  •   ¾ cup dried cherries, halved
  •   ½ cup dried soft golden apricots*, chopped into quarters


Instructions

  1.   Preheat the oven to 250F.
  2.   In a food processor combine the olive oil, honey and salt, and blend for a few minutes to emulsify.
  3.   In a large mixing bowl combine the oats, nuts, and coconut. Toss to combine and mix well.
  4.   Drizzle with the olive oil and honey mixture and toss again to combine thoroughly. You can drizzle a little at a time to coat all of the oats.
  5.   Transfer evenly onto two sheet pans. 
  6.   Stirring every 15 minutes, place in the oven and toast until golden, about 45 minutes total. Remove from the oven and allow to cool for an hour. Add the dried fruit to the sheet pan and toss to mix thoroughly. Optional: Add chocolate chips and toss to combine. 
  7.   Store in an air-tight container or in a mason jar as a gift. 


Notes

Note on apricots: Sulfured apricots are sweeter and brighter in color than unsulfured.
