Caramelized Onion Stuffed Burger Topped with BBQ Sauce and Bacon

Description

These burgers are juicy, delicious and Whole30! Make them up for a Whole30 meal for the whole family on a weeknight or for a delicious weekend barbecue!


Ingredients

  • 3 cups thinly sliced sweet onions
  • 3 Tbsp clarified butter
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 package Whole30 compliant bacon
  • 1 tsp extra virgin olive oil
  • 1 ½ pounds ground beef (90% lean/10% fat)
  • Whole30 compliant BBQ sauce

Instructions

HEAT the butter in a sauté pan over medium heat. Add the onions, and sauté for 15 minutes, stirring occasionally. Lower the heat to medium low, continuing to stir and sautéing for another 15 minutes.  

ADD the salt and pepper and stir to combine.

TRANSFER the caramelized onions to a cutting board and chop. Set aside.

CUT the bacon into small squares.

USING the same sauté pan, over high heat, add 1 tsp olive oil and the cut bacon. Cook until done, about 5 minutes.

REMOVE the bacon with a slotted spoon and place on a paper towel-lined plate, reserving the dripping in the pan.

MAKE 6oz patties and form edges around the outside edge so that there is a large well in the middle. 

PLACE 2 Tbsp of chopped caramelized onions in the well and close the meat around the onions, reforming it into a patty. 

PRESS your thumb in the middle of the patty to make a little indent (this helps the burger retain its juices).

USING the same pan, heat the bacon drippings.

PLACE the burgers in the pan, indent side up, cooking for 4 minutes.

FLIP the burger over and cook the other side for another 4 minutes, covering the pan for the last minute. 

REMOVE from the pan and serve topped with the bacon pieces and  BBQ sauce.
