It’s summertime and living is easy! When it gets hot, I love to scale down meals to pure simplicity, and this easy summer breakfast is just that!

Most of you that follow along, know about my Magic Elixirs. (And for those of you who don’t, run and get on that.) Magic Elixirs are flavor enhancers that take an ordinary dish over the top and make it extraordinary. This dish is made with one of my favorite store-bought Magic Elixirs, Icelandic Provisions Skyr, which is something I’m incredibly enthusiastic about. It’s made from ancient heirloom cultures developed with Iceland’s oldest farmer-owned dairy. These cultures are what set Icelandic Provisions Skyr apart from other skyr brands, making it rich and creamy, and you can taste the difference.

My favorite breakfast (or lunch) is simple – a carton of Icelandic Provisions Skyr, topped with perfect summer fruit, a sprinkle of granola or oats, then finished off with toasted nuts. We’ve taken it up a notch here to make a super clean version with toasted oats and toasted walnuts. You can use my favorite combinations listed below, but remember this is really a guide to an easy, delicious breakfast, and feel free to make it your own and change it up using your favorite Icelandic Provisions Skyr flavor and fresh fruits you love. Toasted Walnuts

Ingredients

1/2 cup of walnuts


Instructions

In a dry, medium pan over low to medium low heat, add the walnuts, stirring constantly, until just toasted, about 8-10 minutes. Remove from pan and roughly chop.

Toasted Old Fashioned Oats

  • 1 tbsp coconut oil
  • 1/2 cup old fashioned oats

Instructions

In a medium pan over medium low to medium heat, warm the coconut oil until hot but not smoking. Add the oats to the pan, stirring constantly, until toasted, about 6-8 minutes.
