I am absolutely crazy about this delicious summer treat. With Labor day weekend coming up, this dessert is great because it takes the idea of frozen yogurt to a whole other level! It keeps you out of the kitchen, comes together in 5 minutes and is so cool and refreshing.  It’s so easy to make, you can teach your kids to do it (or have them do it themselves while you relax!)

Many of you ask, “What is Skyr?”.  Of course, you know that its a nocrumbsleft favorite!  it’s a cultured dairy product. is to Iceland as Champagne is to France and it’s been a provision of Icelanders for more than 1000 years.  What makes Icelandic Provisions Skyr unique is that it’s the only one that is made from ancient heirloom cultures.   These cultures combined with the nearly 4 cups of milk it takes to make just one cup of Skyr is what gives Icelandic Provisions Skyr its delicious, thick and creamy texture and unique flavor that’s never sour, like yogurt.

Healthy Peach Frozen Icelandic Provisions Skyr

Ingredients

  • 1 16 oz bag of frozen peaches
  • 3 Tbsp honey
  • 1/2 cup Icelandic Provisions Peach Cloudberry Skyr
  • 1 Tbsp fresh lemon juice
  • 1/4 tsp lemon rind, grated

Instructions

Add the frozen peaches (make sure that they are separated and not in frozen clumps), honey, Skyr, lemon juice to the food processor and blend until creamy, without opening or taking the lid off, about 5 minutes. If there are still chunks of peaches, blend for another minute until smooth.  If you’d like to add berries, tumble them in and fold in gently once you have removed the dessert from the food processor.

Serve immediately.  Delicious on its own or topped with more fruit like fresh blueberries, sliced bananas, chocolate shavings or coconut.

Store any leftovers in an airtight container for up to a month.

Variations: Plain Skyr with peaches and frozen blackberries; Peach Cloudberry Skyr and frozen blueberries; Raspberry Skyr and frozen plums; Vanilla Skyr with frozen nectarines; Vanilla Skyr with frozen strawberries and bananas; Cherry black Currant with frozen banana
