It’s the dog days of summer and with the heat outside, I’m in the mood for cool and easy dishes that don’t need to be cooked.  Smoothies!  I have been in the kitchen with Icelandic Provisions working on cool and refreshing recipes. And with @nocrumbsleft_kid on her way out the door I’ve been teaching her some basics on how to put an inexpensive meal on the table by giving her some tips and tricks for simple, nutritious and delicious weekday breakfasts, lunches and dinners.  These smoothies with Skyr make a great breakfast, lunch or dinner on a hot day and are off the hook delicious. What I have told @nocrumbsleft_kid is that if you can find something that is delicious, nutritious, simple and inexpensive, you’ve hit the lottery!

Icelandic Provisions Skyr Smoothie

Ingredients

  • 1 container of Peach Cloudberry Icelandic Provisions Skyr
  • 2 tbsp coconut oil
  • 1/2 cup frozen peaches
  • 1/2 cup fresh pineapple
  • 1 Banana
  • ¾ cup of ice
  • A generous handful of spinach

Instructions

Be sure to put the ingredients in the blender in this order.  Skyr, coconut oil, frozen fruit banana (break into a few pieces) and ice in a blender and blend until smooth. Then add spinach and blend again. Pour into a glass and enjoy.

When making a smoothie, always place your liquids in the blender first, then your fruit, blend and then add ice and greens and blend again.


Notes

For a non-dairy version, replace Skyr with ½ cup coconut milk.
