Cinnamon, Cardamom and Vanilla Poached Pears with Ginger Vanilla Whip Cream

Poached Pears! As long as I can remember, I have adored making poached pears. It’s something that everyone in my family can agree on. Delicious as a side dish, they are enhanced when updated with vanilla, cinnamon and cardamom and accompanied by this rather special whip cream vanilla ginger topping. It’s a treat I feel great about serving my family. Easy to do ahead, delicious as well as healthful, these pears have been sent to school with my kids many times as a special classroom snack, and their friends always requested this family favorite. This is a recipe I’m so proud to share because it’s woven into the tapestry of my family. My hope is that you will enjoy these and make them with your family.

Cinnamon, Cardamom, and Vanilla Poached Pears
Ingredients
- 6 pears, cored, peeled and halved
- 2 cups of juice–mango or apple (I use a blend; make sure it’s heavy and unfiltered)
- 1 Tbsp Simply Organic Vanilla Extract
- 1 scant tsp Simply Organic Cinnamon
- ½ tsp Simply Organic Cardamom
Bring the juice to a boil. Cover and lower heat to medium-low or low. Cook covered for 15 minutes. Flip them over, cover and cook for 15 more minutes. Flip them again and cook for another 15 minutes, until the sauce is thickened. If at any point you need more juice, feel free to add by the ¼ cup. Every stove and pan is different, so these can require more or less time. Cook until they are done to your liking.
Ginger Vanilla Whip Cream
Ingredients
- 2 cups heavy whipping cream
- 1 Tbsp sugar
- 1 Tbsp Simply Organic Vanilla Extract
- 1/2 – 1 tsp Simply Organic Ground Ginger Root
Chill bowl and beaters. Whip cream until thick. Add sugar and beat some more. Then add the vanilla and ginger and stir.
