Here’s a family favorite for my non gluten-free friends. This is a guide, along with some ideas on how to prepare the noodles, but make it your own. They’re delightful with protein, vegetables, stir-fried chicken, and more. The sky’s the limit.

The trick to this dish is to get a fresh Chinese noodle. Typically, this can be found only in the refrigerator section of an Asian grocery store, or in my case, Chinatown. There are so many to choose from, so find the noodle you like. I prefer this width noodle to the ones that are more angel hair like, super thin, or wider.

Put the noodles in hot water for about 30 seconds and stir to make sure they are separated. Drain. Then, attempt to dry them a bit. Heat oil in a wok or large pan. Fry the noodles until crispy, about 5 -10 minutes.Make sure you don’t move them around; just let them get really crispy. If you are going the Asian route, you might want to use a sesame oil and finish with chopped green onions. If you prefer the Italian route, use olive oil and add grated parmesan at the end.  Be sure to sprinkle with plenty of kosher salt and black pepper.
