When I received these amazing mangos from Melissa’s Produce, I was beyond delighted, because a spicy mango salsa is a fabulous summer treat. Here we did a combination of julienned jicama, chunks of mangoes, sliced radishes, cilantro, lime and a bit of chipotle powder to add some heat. Luscious and great to use with grilled entrees including tofu, fish and more!

Easy Weeknight Dinner

Here’s one way to use this fabulous slaw for an easy and inspired weeknight dinner. I prepare the slaw in the morning and set aside in the fridge. Grill the swordfish for 2-1/2 minutes a side, remove from the grill, and top with the Mango Slaw. Delicious, healthful, and satisfying.

Chipotle Mango and Lime Jicama Slaw

Ingredients

  • 1 jicama, julienned
  • 3 mangoes, sliced
  • 3 radishes, sliced
  • 1/4 cup cilantro, roughly chopped
  • 1 tsp chipotle powder
  • juice of 1 lime
  • Kosher salt

Instructions

Combine all ingredients in a bowl and stir to combine. Before serving, sprinkle with salt.

This slaw is spectacular by itself, but is also great on top of fish, seafood, or as a snack on tortilla chips.
