Can you imagine a breakfast better than these updated Baklava-style buttermilk waffles? This longtime favorite classic waffle recipe from @cooksillustrated offers the perfect balance of crunch and softness, and here I’ve elevated it by sprinkling bits of pistachio on top and making a honey-orange blossom syrup adopted by @talshofman,  who is an amazing pastry chef from Israel.

This is my everyday waffle from a much used and loved cookbook, (the spine of the book is broken and there are spots all over it) a dear friend gave to me nearly 15 years ago. This Cooks Illustrated recipe, is just simply a fantastic cookbook for amazing standards that hold the test of time. This is their recipe for Best Buttermilk Waffles, though we have enhanced the original recipe with a couple of tablespoons of sugar which gives it just a tiny bit of sweetness and offsets the tartness of the buttermilk and creates balance.

I have to tell you I’m a little bit famous in my community for these waffles. My son is 22 and my daughter is 18 and I’ve made them every year for their classes from kindergarten through high school. This recipe comes from my family to yours and it is absolutely/truly/so infused with love.

Description

Ingredients

  •   2 Tbsp sugar
  •   1 Cup all-purpose flour
  •   1 Tbsp cornmeal
  •   1/12 tsp salt
  •   1/4 tsp baking soda
  •   1 egg separated
  •   7/8 Cup buttermilk
  •   2 Tbsp unsalted butter, melted

Instructions

  1. Whisk dry ingredients together in a medium bowl.
  2. In a different bowl, whisk yolk with buttermilk and melted butter, but not hot butter.
  3. Beat egg white until firm.
  4. Add liquid ingredients to the dry ingredients in a thin, steady stream, while gently mixing with a  rubber spatula. Only add liquid as fast as you can incorporate into the batter. Toward the end of mixing, use a folding motion to incorporate all the ingredients and gently fold egg white into the batter.
  5. Spread batter onto heated waffle iron. Cook for 2-5 minutes until golden brown, or until waffle iron beeps.

Orange Blossom Honey Syrup

Description

A fantastic and elevate syrup for waffles and pancakes


Ingredients

  •   1/2 Cup sugar
  •   1/4 Cup water
  •   1 Cinnamon stick
  •   2 Tbsp honey
  •   1/4 tsp Orange Blossom Water (we put in a 1 Tbsp, depending on what kind you have)
  •   2 tsp Orange rind

 


Instructions

  1. Bring sugar, water and cinnamon stick to a boil and cook to 220 F. No need to stir, just let it do its thing.
  2. Remove from the heat, add honey, orange blossom water and orange rind, then gently combine all.
