What’s your favorite way to make mushrooms? There is so much amazing variety at the farmers market and I love to talk to the mushroom guy. He’s like the Harry Potter sorting hat of mushrooms, knowing which mushroom goes with what dish and it’s impossible to stump him. He selected this delectable mixture for me and I simply roasted on a baking sheet with thyme and olive oil and baked in a single layer for about a half hour. Try it!
