Here’s another genius labor day idea. You know how I absolutely love thick cut meat on the bone? Here’s a twist…have the butcher cut extremely skinny chops on the bone. I love the combination of beef, pork and lamb. You can easily go out today and get these thin cut pork chops and lamb chops. Many places have the beef short ribs, cut flaken style, which is longer and thinner like the Korean short rib. Since we’re cutting down on soy and sugar, we simply marinate with olive oil, garlic, a bit of lemon juice, and salt and pepper. You can marinate for a couple of hours, but I prefer longer, even overnight. Grill on a hot grill, 2 minutes a side. Pull off, let them rest, and enjoy!
