Chicken Jus

I’m a gal that loves a magic potion and thinks nothing of cooking down 11 pounds of red peppers for 17 hours to create a magic elixir. This is just like that. It seems like everywhere you go everyone is talking about Chicken Jus. It’s the precious bit of fatty juice left over that can be coaxed into a lovely sauce. I made a double portion here. Why go through all the trouble and make just one. I ended up with four quarts of perfection. I froze several dozen muffin tins full so I have a bit of flavor enhancer to add to my day to day cooking. Since I am doing Whole30 and eating super clean I’m not currently using any store bought sauces that have additives. This is a great substitute and completely exciting to make.
