I was so pleased to have the wonderful pulled pork photo on my Instagram @nocrumbsleft reposted on Paleo Foodies‘ Instagram! What a wonderful way to enhance connections within the foodie community. Love slow cooking meats to bring out the beauty and flavor. Such is the case with this easy and delicious slow cooked pork shoulder. I use a combo of spices that I blend and I slow cook mine at 200°F. in a covered Dutch oven for 8 hours and shred. The bottom is a guideline to be used but it can be changed 100 ways and throw in whenever you feel like cause I do.

- 2 Tbsp smoke paprika
- 1 Tbsp coarse sea salt, chili powder, sumac
- 1/2 Tbsp ground black pepper, oregano, white pepper
- 1 tsp cayenne
Combine these spices, rub all over meat, cover in plastic and marinate overnight. slow cook in a covered Dutch oven at 200°F. degrees for 8 hours, or use a slow cooker. When pork is in oven, carefully pour a 1/4 cup of water around the bottom of the pan. One key to cooking is to absolutely watch and let your nose guide you to see what’s happening with the food. I tend to take this out once an hour and take a peek at it and quickly close the oven while I take it out to keep the heat in. I pull it out of the oven and put it on top of the stove and take a peek at it. I flip it or basted a bit if it looks like it needs it. Most importantly use your intuition.
